Unlike your average, boring, everyday leftovers, there's something special, almost mythical about Thanksgiving leftovers. People seem to love the leftovers as much as the main meal, and everyone wants to reinvent the turkey, cranberry, and stuffing into a new, exciting, and extraordinary dish. While I'm a huge fan of a classic sandwich or turkey tortilla soup, today I'm craving something more exotic like mashed potato spring rolls!
How about you? What's your favorite way to eat turkey day leftovers?

I just like to heat up a plate of leftovers and have a replay of the night before's dinner. Sometimes I'll add a piece or two of bread to make it an open faced sandwich with all the fixins.
1I make Turkey enchiladas (turkey and beans with fajita seasoning, with salsa and cheese on top, served with sour cream, the kids go nuts for this).
2Or we do homemade meat pies. I slow cook up a roast beef and we make turkey and beef meat pies (we make a more bread like pie crust as opposed to flaky)
i throw my favorite items (stuffing, mashed potatoes, and turkey and grave) on a plate and nuke it...super simple
3Nothing too fancy; I just mix mashed potatoes, stuffing, and turkey together into patties and fry them in a pan to make little croquettes. They're pretty tasty. And I use the rest of the turkey to top salads.
4Turkey and Spinach salad tonight, turkey soup for later (the carcass has been making a broth all night!), turkey chili after that...I definitely love the leftovers!
5I love having an after-Thanksgiving Day sandwich with turkey, cranberry sauce, stuffing, and sometimes I drizzle a little gravy on it. I'm also looking forward to whipping up a big batch of turkey noodle soup.
6We had roast pork, not turkey ... and a nice cold pork sandwich with gravy is AWESOME.
7I have been making kentucky hot browns for the past couple of years. My husband looks forward to them more than Thanksgiving dinner!
8i make a sort of shepherds pie. Turkey and gravy mixed with layers of suffing and potatoes in a casserole dish. I do the same with roast leftovers.
