Manchego
A type of sheep's milk cheese native to the La Mancha region of Spain. It is Spain's most popular cheese is pale in color with a waxy rind and is usually sold in cylinders or wedges. It's a semi-firm, rich cheese with a mellow to sharp flavor depending on the age. The most commonly exported cheese is aged 3-4 months and is known as curado, while the older kind is called viejo. Great for snacking and melting.

I love this cheese, is one of my favorites. I didn't know it was good for melting! I'll have to try that
1Mmm!
2If your grocery store or cheese shop sells Membrillo, or quince paste - or even quince jam - it is delicious with manchego! A slice of manchego and a slice of membrillo on a piece of baguette is wonderful. It's like an international version of cheddar cheese with apple pie ...
3mmm i just tried this kind of cheese this weekend and it was super tasty
4Yum! This sounds like the type of cheese I like, I've never heard of manchego...
5Oh gosh, I'm such a manchego addict. I could just eat slice after slice of this stuff.
6I just bought my first hunk of manchego...if anyone has any crafty tasty ideas for it (aside from just going directly in to my mouth) I'd love to hear them!
7i love Manchego...actually, i just love cheese...manchego, parmegiano reggiano, gouda, chevre...all of them...
8I just had Manchego with quince jelly as an appetizer at a restaurant recently, and now I'm addicted! So yummy!
9Manchego is also one of my favorites!
If you like this cheese, also try Dutch Parrano or Old Amsterdam.
10Ohhh my parents love that cheese, i'm not really a fan of cheese in general!!!
11I love manchego. I make a creamy polenta with spinach and manchego that is just fabulous.
12Viva España!
looove my queso curado..at tapas bars it's sometimes
conserved in olive oil, and best eaten as a tapa with piquitos (short bread sticks), fresh bread, jamón serrano (kinda like prosciutto), spanish green olives, and a nice glass of wine or a
cold beer...*drools*
13I absolutely love this cheese!
14Rachel Ray uses manchego all the time. She probably has some good recipes around.
15This is actually my favorite cheese!!
16This is amazing! Love to eat a slice then eat a grape. Perfect salty/sweet combo!
