Manchego
A type of sheep's milk cheese native to the La Mancha region of Spain. It is Spain's most popular cheese is pale in color with a waxy rind and is usually sold in cylinders or wedges. It's a semi-firm, rich cheese with a mellow to sharp flavor depending on the age. The most commonly exported cheese is aged 3-4 months and is known as curado, while the older kind is called viejo. Great for snacking and melting.
