Normally I prefer chili nachos with cheese, jalapenos, and some cheese. I guess that's why the greek ones looked good to me. Lamb, oregano, feta, tomato sauce with chunky tomatoes and onion? Why not! Sounds yummy.

I love traditional nachos. No need to deep fry them (total fat overkill). Just prep the little nachos and bake in the oven. Time it right and the chip will be toasty and crisp and the cheddar won't be hard. They totally have to have a little pickled jalapeno slice on them to be complete though.
