Newburg
An extravagantly rich dish that is usually served on toast points. Cooked chopped shellfish (lobster, shrimp, crab, etc.) is covered in an elegant sauce consisting of butter, cream, sherry, egg yolks, and seasoning. The sauce can be used with other foods, but traditionally is paired with the shellfish.
