With farmer's markets open all around, fresh local produce has never been more accessible. This simple compote, made with fresh Summer peaches and cherries, is the perfect way to start the day. Add a few spoonfuls to a Greek yogurt granola parfait or use it as topping for pancakes — it will add a little sunshine at breakfast time.
Fresh Summer Peach and Cherry Compote
- 3 large peaches, peeled, pitted, cut into 1/2" slices (about 5 cups)
- 1 cup cherries, pitted
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup
- 3 tablespoons water
- Place peach slices, pitted cherries, vanilla extract, maple syrup, and water in a medium saucepan.
- Bring to a simmer and cook for about 5 minutes, stirring occasionally, until fruit is just softened, but still firm.
