Peppermint Patties Recipe

I'm Katie at Hip Cook Kitchen in L.A., and I'm here to share with you one of my favorite edible gift recipes, peppermint patties. These creamy, chocolate-coated treats are pretty unexpected, and they are actually quite easy to make. What you're going to need is powdered sugar, dark chocolate, pasteurized egg whites, water, pepper mint extract and vegetable oil. First we're going to line two baking sheets with parchment paper. I've already pre-measured 3 1/2 cups of powdered sugar and one fourth cup of pasteurized egg whites. Then, I'm going to measure 1 teaspoon of water and 1/4 teaspoon of peppermint extract. We're going start by mixing it on low speed. Once the mixture is smooth, we're going to increase the speed until it forms a thick dough. And if the mixture is too stiff, add 1/2 a teaspoon of water. So, now I'm gonna dust this work surface with powdered sugar, so I can roll out our peppermint patty dough. So, don't be afraid to get a little messy. You want to coat your hands in powdered sugar. Roll the dough into a 12-inch log. Slice it into 1/4 an inch slices. When you're done slicing the log, you're going to roll each piece into a small ball. Then we're going to flatten it into the shape of a classic peppermint patty. Once we finish, we're going to set them aside at room temperature, uncovered, for three hours to dry out. So, now that our peppermint patties are nice and dry, all we have to do is prep our chocolate and we're ready to dip. We need 16 ounces of dark chocolate, chopped. It doesn't have to be perfect, because you're going to melt it. So, just these big chunks is perfectly fine. Here we're setting up a double-boiler. We've got a small saucepan and it has simmering water. Then we're going to take a large metal pan and place it on top. We're going to the chocolate inside and melt the chocolate down. Along with our chocolate, we're going to add 2 teaspoons vegetable oil. You want to stir until the chocolate is smooth and melted and glossy. You're going to need a pot holder for holding the pot, because it gets very hot. This is where the fun begins, we get to dip our patties in the melted chocolate. You're going to need two forks. Take the patty, just drop it in the chocolate. Turn to coat, and then scoop it out and you're going to let it drizzle off the excess chocolate. We are going to transfer them to a parchment paper lined baking sheet to cool. Here's a fun tip.To make them more special, add a topping. I like to use crushed candy cane. Adding the crushed candy cane on top really makes it festive for the holidays. A little something I like to do, to speed up the process, put them in the freezer for fifteen minutes. Our peppermint patties are finally set. These are so good you're going to want to put aside a plate for you to enjoy yourself.
