A delightful alternative to the classic caprese salad, these skewers are bite-sized pieces of heaven. The recipe couldn't be easier, and the simplicity highlights the pure flavor of ripe tomatoes and fresh cheese. 1 bunch fresh basil, leaves removed from stems
2 garlic cloves
3 tablespoons pine nuts
1/4 cup finely grated parmesan cheese
3/4-1 cup extra virgin olive oil
salt and pepper, to taste
1 pint heirloom cherry tomatoes
1 pint fresh mozzarella, chopped into small 1-inch cubes
