In a straight forward classic burger, I usually opt for sharp cheddar. And bacon.

I like cheddar. American, while not a cheese for solo consumption (in my opinion), does perform admirably on burgers, as it melts to a fantastic consistency and has enough tang and richness without getting grainy and weird.

American, unless I make my own burgers at home. Then I'll use something fancier like brie, blue or aged cheddar.
