Quenelle
Usually made from seasoned ground meat, fish, or vegetables, this light, delicate dumpling is formed into small ovals and poached. They can be served in a rich sauce, as a first or main course, or as a garnish. It's a term given to anything in that shape, I've even seen ice cream served this way.
On a recent episode of Top Chef, Nikki attempted to impress Daniel Boulud with her quenelle.
