Looking for a low-key Sunday night meal? Look no further than tender, slow-cooked red bell peppers, stuffed with a Greek-inspired filling of fiber-rich cannellini beans, crumbled feta cheese, scallions, and herbed couscous.

Ingredients
4 large bell peppers
1 can (15 ounces) cannellini beans, rinsed and drained
1 cup crumbled feta (4 ounces)
1/2 cup couscous
4 scallions, white and green parts separated, thinly sliced
1 garlic clove, minced
1 teaspoon dried oregano
Coarse salt and ground pepper
Lemon wedges, for serving
Directions
- Slice a very thin layer from the base of each bell pepper so they sit flat. Slice off tops just below stem. Discard stems; chop tops, and place in a medium bowl. Remove ribs and seeds from peppers.
- To bowl, add beans, feta, couscous, scallion whites, garlic, and oregano. Season with salt and pepper, and toss to combine. Stuff peppers with bean mixture; place upright in slow cooker. Cover; cook on high, 4 hours.
- Sprinkle peppers with scallion greens; serve with lemon wedges.
Serves 4.

1Does the couscous have to be dry or already cooked?
2there are so many variations to this kind of recipe, the one that my grandmother makes (i'm Cypriot which is basically greek) and we have our own version of this, that u can stuff into tomatos, onions, wrap it in grape leaves, anything really. you could even just use some chopped meat, diced onions, garlic and tomatos, with some seasoning (i forget which kind, probably parsley) and lemon and viola. every greek household you go to will probably make a slightly different version of the dish. the difference between cypriot and greek versions is that cypriots use meat in theirs and greeks do not

5I have seen this recipe before and would love to make it, but my crockpot is tall and narrow so the peppers can't sit in it. I wonder if there is another way...
