When I was making watermelon sangria, my best friend was helping me prepare it. "I always avoid recipes with simple syrup because I don't know how to make it," she said. I was a little shocked because simple syrup is incredibly easy to make and is wildly versatile. As I taught her how to put together simple syrup, I realized maybe some of you are like my best friend.
Here's the deal with simple syrup: it's used to sweeten everything from drinks to desserts. A classic variation consists of equal parts sugar and water, while a rich simple syrup is two parts sugar to one part water. It keeps in the fridge for up to a month and can be flavored with citrus, herbs, and fruit. To get the uncomplicated technique you'll use over and over again, keep reading.

Ingredients
1 cup sugar
1 cup water
Directions
- Put the sugar and water in a small saucepan.
- Heat over high, stirring to dissolve the sugar.
- Bring to a boil. Once it is boiling, the sugar is completely dissolved into the water.
- Remove from heat and let cool. Pour into a jar or bottle and store in the fridge for up to a month.
Makes about 1 1/2 cups.
