These little gems come around once a year, and they can be kind of hard to find. Padrón peppers are mostly sweet, but every so often you'll find a spicy one. Fry them up in some olive oil until they're nice and blistered and sprinkle sea salt on them for a perfect side dish or tapa. Check at your local farmers market or specialty Spanish food store.
