Just because St. Patrick's Day falls on a Thursday this year doesn't mean you can't have a fabulous celebration. Invite friends over for a weeknight dinner, or host a party on Saturday, March 12. I've put together a classic meal that's got all the Irish favorites like corned beef and soda bread. Read on for the recipes!

Salmon Mousse

This recipe [1] is great for entertaining because it stretches a small amount of smoked salmon to serve a crowd. Don't be intimidated by the word mousse; it's incredibly easy to put together. Make it the morning of the party, so it has plenty of time to set. Serve with crackers.

Irish Cheddar

Along side the salmon mousse and crackers, set out a block of Irish cheddar cheese. The Kerrygold [2] brand is sold in many large grocers. Their white cheddar is sharp, rich, and excellent. Place on a wooden cutting board with a cheese knife nearby to cut into shards.

Corned Beef and Cabbage

For the main course, take some help from the slow cooker! This corned beef and cabbage recipe [3] is a complete meal with potatoes, carrots, and leeks. All you have to do is throw the ingredients in the slow cooker and leave on for several hours. A dollop of tangy horseradish cream is the perfect accompaniment.

Irish Soda Bread

This recipe for Irish soda bread [4] comes from my great grandmother who was born in Ireland. Her method is uncomplicated; all you need is a bowl and wooden spoon. Don't skip the caraway seeds and raisins, as they really add to the flavor and mouthfeel of the bread.

Bailey's Pot de Creme

Finish the meal with a cool treat in the form of Bailey's pot de cremes [5]. This dessert needs a night to chill in the fridge, so be sure to plan ahead. Offer with homemade [6] or store-bought shortbread cookies.
