I know I just said that I don't eat the seeds of pomegranates, but after the vast majority of you said "Why bother?" I proceeded to give it another try. Guess what? It's not so bad — it lends a textural crunch and grittiness that needs some getting used to, but I'm starting to like it.
I decided to embrace the seeds by tossing together a simple and straightforward Fall fruit salad. The result was a brilliantly-colored melange of persimmons, pomegranates, onions, and spinach with an equally bright flavor profile. To get excited for the season, read more.

1I'm in the fruit-doesn't-go-on-salads camp.
that looks soooo good.
2That looks tasty to me. The colors are amazing!
3looks scrumptious to me... i believe anything can go on a salad. It makes a salad soooo much more interesting.
4not for me...I like fruit and salad separate.
5Look so good, and I'm up for just about anything that will get me to eat more veggies. That includes fruit.
6I love pomegranate seeds in salad! They're the perfect combination of savory and sweet when dressed with olive oil and balsamic vinegar.
7i love how open you are to trying new things - you're a better person than i....since if i don't like something, it takes a lot for me to give it another try. i do LOVE the way that this salad looks though. it's soo pretty and bright and perfect for the season.
8i love the colors to it! i am so giving this a try. i already have poms and persimmons on hand just need the spinach. (didn't know what i was going to do with the persimmons. . .)
9Such a beautiful salad!
10I made this last night... what a gorgeous salad! I didn't have any sherry vinnegar so i substituted with red wine vinnegar, and then added about a tablespoon of brown sugar. I made this with your recent roasted chicken recipe, they tasted great together.
