Tenderloin
A cut of meat that is the most tender (and therefore usually the most expensive). On a cow or pig this piece of meat is found in the middle of the back between the sirloin and the rib. It is so tender because the muscles do little to get toughened. The elongated muscle can be separated from the bone and is sold as a tenderloin roast. When it is cut into pieces to make fillet mignon steaks.
