A Sparkling and Sophisticated Take on Spiked Cider

Champagne cocktails are a wonderful way to kick off Thanksgiving; we've experimented with all kinds, from pomegranate sparklers to grapefruit-elderflower fizzes.

This unusual cocktail caught our attention because, unlike other cocktails, it's a sparkler that doesn't call for Champagne. Instead, it makes use of cognac and sparkling apple cider — and what could be more seasonal than that? The result is soft, aromatic, and complex, a surprising outcome for a cocktail with only three ingredients.

Ingredients

1/2 ounce (1 tablespoon) cognac
3/4 cup chilled sparkling apple cider
A few dashes bitters

Directions

  1. Pour the cognac into a chilled Champagne flute. Top with chilled sparkling apple cider, and finish with a few dashes bitters; stir and serve.
