One of my good friends was recently explaining how much she missed her Norwegian grandmother's Christmas cookies. She recalled them as a simple butter cookie marked by her grandmother's thumbprint and sprinkled in sugar. I took note of all of the details and luckily, I was able to find a recipe that matched her description.
I gathered up all of the ingredients and got to work. These treats turned out to be simple and dense butter cookies, perfect for a quick dip in a cup of coffee. While the thumbprint was not her grandmother's, she was thrilled to receive a plate full of such a familiar cookie. Ingredients
2 large eggs
1 cup sugar
4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cup unsalted butter, softened
1/2 cup sugar cubes, coarsely crushed, or pearl sugar or raw sugar
Directions
- Beat together 1 egg and sugar with an electric mixer until thick and pale.
- Sift in flour and baking powder and add butter. Beat on low speed until mixture forms a dough.

- Chill, wrapped in plastic wrap, until firm, at least 1 hour.
- Preheat oven to 350°F.
- Lightly beat remaining egg. Roll level 1 1/2 teaspoons of dough into balls and arrange 1 inch apart on ungreased baking sheets.

- Press thumb into center of each ball to flatten, leaving a depression, and brush lightly with egg. Sprinkle crushed sugar in centers and bake in batches in middle of oven until golden, 12 to 18 minutes. Transfer to racks to cool completely.

Makes 4 dozen cookies.

We used to make these, except that we used peanut butter in them instead of butter. Either way, they sound delicious.
1I have a question- your sticks of butter look like 1/2 sticks. So is it 1 and 1/2 sticks of butter, ie is it 3 half sticks? Also, is it sweet butter? unsalted? salted?

The cup is ok - that i found yet EVERY country has its own measures with Butter

My mother had a recipe for the Santa Thumbprint cookies, not sure what all ingredient's are but I do know b4 you put the thumbprint roll in coconut then after placing your thumb in center add about a TBS of favorite jelly, mine is strawberry but grape is pretty good too. I think you all would enjoy those better!

6Sorry about that my mistake, I should have put it in cups at the very least. One stick is 1/2 cup, so the recipe calls for 1 1/2 cup butter. I used unsalted and added a little salt to the recipe but I am sure you could use salted and just skip the salt. Hope that helps and these cookies are tasty!!!!

8I'm norwegian and I have never heard about these cookies. They are not traditonal norwegian these days. But they look good.
Maybe I should try them and spread the word?
My oldemor(great-grandmother) used to make these a long time ago! I am sure it is an older recipe.
9Sarke, I think it is some sort of mutation off Serina cookies. The ingredients seem the same (though judging from measurements cups vs. gram I can't say for sure). We would usually use a fork to squish it down, have on sugar and chopped almonds on top.

they're called serina cookies in Norway..and my mom makes them...maybe i'll make them tomorrow ( even though making cookies in extreme heat isnt a good idea..im in Sydney..)
