An Absolutely Divine 2-Ingredient Summer Treat

School is out, and Sum­mer vaca­tion is upon us. We are eagerly look­ing for­ward to warm days spent out­side: at the park, at the beach, and explor­ing our city. Some of those hot after­noons deserve a spe­cial treat, and this sim­ple dessert is a per­fect way to cool off. Waf­fles are lightly toasted and then topped with ice cream, which just may be the eas­i­est ice cream sand­wich assembled ever.

You can make these as sim­ple or as elab­o­rate as you like. Store-bought waf­fles and ice cream will work just fine, or you can go ahead and make your own. I highly rec­om­mend The Faux Martha's whole wheat waf­fles [3], or banana bread waf­fles [4] from Top With Cin­na­mon. This no-churn peanut but­ter ice cream [5] would also taste deli­cious in between your favorite waffles.

To Assemble

Toast waf­fles until crisp and golden (or, if mak­ing home­made, use warm off the iron).

Place a scoop of ice cream on one warm waffle.

Top with another warm waf­fle and gen­tly press together.
