What Part of Green Onions Do You Use?

When an ingredient list calls for green onions (or scallions as they are also known), it often asks for the white parts only. However, I feel bad about tossing the majority of the vegetable away and almost always use the greens too. How about you?

I use the whole thing. I can't recall any recipes I've seen in a long time that called for only white/green parts. Yes there is a flavor difference, but I love onion flavor, so i just pop it all in.

I paid good money for those onions so I am going to use all of it, maybe not in the same dish. But I will throw it in with my morning omelet.

Every delicious little bit gets used. I love to cut the green parts with kitchen shears on the skinny diagonal. It makes for a very pretty and bright garnish to so many savory dishes.

i use whatever the recipe says and say what is not needed for another dish.

Whatever the recipe says. Sometimes I save the green tops, if I don't use them, for vegetable or chicken stock.

I love green onions. I use the whole thing. They are great for marinades and dressings. I just put some in my pineapple corn salsa.

If the recipe calls for a particular part, I'll use that part and save the rest for salads or something. But if it doesn't call for any specific part, I just use the whole thing.
