Merry Christmas! I hope that you're cuddling up somewhere safe and cozy on this festive holiday. Since food plays such an essential role in celebrating Christmas, I want to know what you're feasting on today. I'll be starting out with a spicy pine nut and spinach dip, moving on to an apricot-ginger glazed ham, and finishing with a German chocolate cake roll. What's your holiday menu going to be? We had roasted red snapper with garlic and cilantro and red beans and rice with pico de gallo. Una casada tipical!

I'm laughing at Spectra that is the second person I've heard say they do Chinese on Christmas Eve! We do the seven kinds of fish on Christmas Eve (our huge family get together) because we are Italian. I HATE it and eat NOTHING, but plain buttered pasta (even our sauce has tuna in it). On Christmas day (there are only ten of us) we have a delicious meal of homemade wedding soup, pasta, filet, and sides. The wedding soup alone makes up for the night before!

Last night I did Chile Rellenos (family tradition to do Mexican food) and tonight I made Cornish Game Hens in a cherry/ginger glaze, breadcrumb encrusted cauliflower, leek & potato gratin, and a champagne vinaigrette poached pear/baby green salad with toasted walnuts and blue cheese.

On Christmas Eve, it's ALWAYS Chinese takeout (not sure why; we've just always done it that way) and on Christmas, we had ham, Chicken Kiev, cheesy potatoes, green bean casserole, and various pies and cookies and candy.

We are having greek salad, hummus, babaganoush, pita chips, leg of lamb and cherry pie since hey ran out of bakalava

Well we celebrated last night. We had gravlax with potato pancakes and salad, reindeer with a potato, carrot and swede gratin, peas, and marinated beets, and a chesnut, chocolate, and coffee bûche de Noël.
