Any of the cheddar family really, but especially the extra extra mature stuff... and an Irish sharp cheddar is some of the best cheesy goodness around.

oh man, this is the hardest poll yet! Right now I'm really into cypress grove's humboldt fog. it's a creamy goat cheese, but also blue covered in honey, or how about amsterdam reserve? that one is so nutty and awesome... I think it's time for a cheese plate!

I'm sorry guys I totally forgot to give the all of the above option! That's actually the category I fall into as well, I love cheese so much its hard to decide my favorite...lately all I want to eat is manchego.
Aged gouda!!! super yummy with little crystals in it.
I love all cheese but my favorite is Brie
