i'm so glad that you posted the meatless Thanksgiving article there - since that's something that i have been dealing with for the past 15 years. i'm a veggie and this is one of those days that i just resign myself to having just sides since it's enough of a hassle for the cook to make turkey let alone another dish. i like the idea of a pumpkin and kale lasagna...my only issue is that i feel like lasagna takes away from the thanksgiving-ness of the day. it's definitely got the fall flavors, but i don't know about it for me. i might create a dish that uses those flavors though since it's really appealing in itself.
