In my opinion everything tastes great when eggs are involved. Which is why I am trying to figure out how come I have never thought of baking an egg inside of a tomato. This looks seriously delicious! - Serious Eats

I made stuffed tomatoes last weekend, from the Everyday Italian cookbook by Giada Laurentiis. Very very easy, and sooooo tasty! I stuffed regular tomatoes and big ol' heirloom tomatoes too!

That sounds really good. I'd also probably top it off with some cheese and maybe some fresh herbs. I'm thinking mozzarella and a little basil. Stuffed tomato caprese!
