Watermelon Tequila Cocktail Recipe 2009-07-23 16:49:08

Ingredients

1/4 cup water
1/4 cup granulated sugar
8 cups diced seedless watermelon (1 pound)
1/4 cup fresh lime juice
1 3/4 cups blueberries
3/4 cup lightly packed fresh mint leaves, plus 8 sprigs for garnish
1 1/4 cups silver tequila

Directions

  1. In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved, about 1 minute; let the sugar syrup cool.
  2. In a blender, puree the watermelon until smooth. Set a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp.
  3. In a large pitcher, combine the sugar syrup with the lime juice, blueberries and mint leaves. Using a wooden spoon, lightly muddle the blueberries and mint
  4. Add the watermelon juice and tequila. Refrigerate until chilled, about 2 hours.
  5. Pour the cocktail into tall ice-filled glasses. Garnish with the mint sprigs and serve.

Makes 8 drinks.

Classic Beer Can Chicken Recipe

Ingredients

1 (12-ounce) can beer
1 (31/2 to 4 pound) chicken
2 tablespoons Basic Barbecue Rub, recipe follows
2 cups barbecue sauce
4 to 6 cups hickory or apple wood chips, soaked for 1 hour in water to cover, drained

Directions

  1. Pop the tab off the beer can. Using a church key style can opener, make a few more holes in the top of the can. Pour out half the beer into the soaking water of the wood chips. Set the can of beer aside.
  2. Set up the grill for indirect grilling and preheat to medium. If using a charcoal grill, place a large drip pan in the center. If using a gas grill, place all the wood chips in the smoker box or in a smoker pouch and preheat the grill to high until you see smoke, then reduce the heat to medium.
  3. Remove the packet of giblets from the body cavity of the chicken and set aside for another use. Remove and discard the fat just inside the body and neck cavities.
  4. Rinse the chicken, inside and out, under cold running water, drain, and blot dry inside and out with paper towels.
  5. Sprinkle 2 teaspoons of the rub inside the body and neck cavities of the chicken. Rub the bird all over on the outside with 2 teaspoons of the rub. If you have the patience, you can put some of the rub under the skin being careful not to tear it.
  6. Spoon the remaining 2 teaspoons of rub through the holes into the beer in the can. Don't worry if it foams up, this is normal. Insert the beer can into the body cavity of the chicken and spread out the legs to form a sort of tripod. Tuck the wing tips behind the chicken's back.
  7. When ready to cook, if using a charcoal grill, toss all the wood chips on the coals. Stand the chicken up in the center of the hot grate, over the drip pan and away from the heat. Cover the grill and cook the chicken until the skin is a dark golden brown and very crisp and the meat is cooked to an internal temperature of 180 degrees F, about 1 1/4 to 1 1/2 hours. If using a charcoal grill, you'll need to add 12 fresh coals per side after 1 hour.
  8. Using tongs, carefully transfer the chicken in its upright position on the beer can to a platter and present it to your guests. Let rest 5 minutes, and then carefully remove the chicken from the beer can. Take care not to spill the hot beer and burn yourself. Quarter or carve the chicken and serve with barbecue sauce.

Serves 4.

Basic Barbecue Rub:
1/4 cup firmly packed brown sugar
1/4 cup sweet paprika
3 tablespoons ground black pepper
3 tablespoons kosher or sea salt
1 tablespoon hickory salt
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon cayenne powder

Combine all the ingredients in a mixing bowl and stir to blend together. Store the rub in an airtight jar away from heat or light and it will keep for at least 6 months.

Texas Woman Faces Frog in Frozen Beans

What's the deal with frozen green beans?

What's the deal with frozen green beans? Last Fall, a New Zealander discovered a shrunken mouse's head in hers, and, proving we're just as prone to the situation stateside, a Texas woman reportedly opened a bag to find a frog's face staring back at her.

Chasity Erbaugh from Tyler, TX, went to stir butter into her green beans and encountered the whole front end of a frog, spinal cord attached, with its tongue hanging out. Horrified, she notified county health inspectors, who got in touch with the Wal-Mart where she purchased the beans to have the rest of the lot pulled from shelves. Although the county health department filed a complaint with the FDA, it also urged consumers to look closely at their food before eating it. But Erbaugh has lost her confidence with frozen foods. Moving forward, she vows to only buy fresh vegetables, even if the measure is at her expense. "Do you know how much my grocery bill is fixing to go up?" she said.

The trickiest part of being a barista is deciphering the code on the side of a Starbucks cup. It was like trying to read an unknown foreign language. "That's a nonfat, two-pump white mocha," Deanna said, reaching for espresso shots, as I stood there, still trying to make sense of the notations. Customers rarely place orders for standard drinks, she explained: "One girl comes in every day and orders a venti Coffee Frappuccino with a grande scoop of ice, double blended, with light whip and just a little chocolate drizzle."
