As much as I love experimenting with new spirits, sometimes I just need a girlie pink vodka cocktail with a fun name. Enter the raspberry shag.

Don't be fooled by the vibrant color. This drink — a mixture of sugared muddled raspberries, vodka, lemon juice, and soda — is not overly sweet. It is smooth, refreshing, and fruity.

The original recipe calls for strawberries, but I decided to try raspberries instead. I think any berry, like blackberries or blueberries, would work well in this concoction, so use what you have on hand. To check out the recipe, read more

Pinto Bean Molé Chili

Fast & Easy Recipe For Pinto Bean Molé Chili 2009-09-18 14:47:02

Ingredients

2 medium dried ancho chiles, wiped clean
1 dried chipotle chile, wiped clean
1 teaspoon cumin seeds, toasted and cooled
1 teaspoon dried oregano, crumbled
Rounded 1/8 teaspoon cinnamon
2 medium onions, chopped
2 tablespoons olive oil
4 garlic cloves, finely chopped
3 yellow squash, quartered lengthwise and cut into 1/2-inch pieces
3/4 pound kale, stems and center ribs discarded and leaves coarsely chopped
1 teaspoon grated orange zest
1/8 teaspoon sugar
1 ounce unsweetened chocolate, finely chopped (3 tablespoons)
1 (14 1/2-ounce) can whole tomatoes in juice, drained, reserving juice, and chopped
1 1/4 cups water
3 (15-ounce) cans pinto beans, drained and rinsed
Equipment: an electric coffee/spice grinder
Accompaniments: rice; chopped cilantro; chopped scallions; sour cream

Directions

  1. Slit chiles lengthwise, then stem and seed. Heat a dry heavy medium skillet over medium heat until hot, then toast chiles, opened flat, turning and pressing with tongs, until pliable and slightly changed in color, about 30 seconds. Tear into small pieces.
  2. Pulse cumin seeds and chiles in grinder until finely ground. Transfer to a small bowl and stir in oregano, cinnamon, and 1 1/2 teaspoons salt.
  3. Cook onions in oil in a large heavy pot over medium-high heat, stirring occasionally, until softened. Add garlic and cook, stirring, 1 minute, then add chile mixture and cook, stirring, 30 seconds. Stir in yellow squash and kale and cook, covered, 5 minutes. Add zest, sugar, chocolate, tomatoes with their juice, and water and simmer, covered, stirring occasionally, until vegetables are tender, about 15 minutes.
  4. Stir in beans and simmer 5 minutes. Season with salt.

Serves 6.

Fast & Easy Recipe For Fresh Vegetable Quesadillas with Corn Relish

Ingredients

1 tablespoon olive oil, plus more for grates
4 ears corn (husks and silks removed), or 1 package (10 ounces) frozen corn kernels, thawed
1 bunch scallions, half of bunch thinly sliced, other half cut into 2-inch lengths
1 tablespoon fresh lime juice
Coarse salt and ground pepper
4 flour tortillas (10-inch)
1-1/2 cups shredded Monterey Jack cheese (6 ounces)
1 yellow squash, halved crosswise and thinly sliced lengthwise
1 orange bell pepper (ribs and seeds removed), thinly sliced

Directions

  1. Heat grill to low; lightly oil grates. Cut off tip of each cob. One at a time, stand each ear in a large wide bowl; with a sharp knife, carefully slice downward to release the kernels (you should have about 2 cups). Discard cobs.
  2. Add sliced scallions, lime juice, and oil to bowl. Season with salt and pepper, and toss to combine. Set corn relish aside.
  3. Place tortillas on a work surface. Dividing evenly, sprinkle half the cheese on bottom half of each tortilla. Top with squash, bell pepper, scallion pieces, and remaining cheese; season with salt and pepper. Fold top half of tortillas over filling to close.
  4. Grill quesadillas, turning once, until browned in spots and cheese has melted, 6 to 8 minutes. Cut into wedges; serve immediately with corn relish.

Serves 4.

Tyler Florence Hosts Search For the Greatest American Recipe

Tyler Florence may be slated to open several new restaurants and stores, but he's certainly not letting that get in the way of what he does best — TV.

Tyler Florence may be slated to open several new restaurants and stores, but he's certainly not letting that get in the way of what he does best — TV. In addition to Tyler's Ultimate, his current show on Food Network, he's also teamed up with Lifetime and Parade magazine to host a new show, Search For the Greatest American Recipe.

The pilot, which begins production Sunday in Los Angeles, "will follow Florence as he travels to seven regions of the country to find unique homegrown recipes. Regional finalists then compete in a cooking competition that would lead to winning 'Greatest American Recipe.'"

In addition to hosting the show, TyFlo will also play the role of one of the show's judges. I'll be interested to see how the pilot pans out — after all, it sounds a bit like Food Network Challenge meets Chopped. Does Greatest American Recipe sound like something you'd watch?
