The method is simple: you combine vodka with fruit, herbs, or seasonings and let it infuse for about a week. Then you strain the mixture, and the liquid you are left with is homemade flavored vodka. My favorite kind to make is cranberry vodka. The cranberries turn the vodka the most brilliant shade of pink, and the taste of the vodka is far superior to any store-bought version. Since it's 100 percent natural, it has none of the cough syrup flavor that is sometimes associated with berry vodkas. Use the cranberry vodka in a martini recipe or put it in a fun bottle and give as an edible gift. Want the easy recipe?

Pork Shoulder alla Porchetta

Pork Shoulder alla Porchetta

Simple Porchetta Recipe

Ingredients

For pork:
4 pounds boneless pork shoulder
Salt and pepper
1/4 cup extra-virgin olive oil
1 medium onion, thinly sliced
1 bulb fennel, fronds chopped and reserved, bulb thinly sliced
2 pounds ground pork shoulder (you can use already-made sausages if need be)
2 tablespoons fennel seeds
2 tablespoons freshly ground black pepper
2 tablespoons chopped fresh rosemary
6 cloves garlic, thinly sliced
2 eggs, beaten

For rub:
20 fresh sage leaves
3 fresh thyme sprigs, stems removed
3 sprigs rosemary, stems removed
2 garlic cloves, coarsely chopped
1 tablespoon fennel seeds, slightly toasted
1 1/2 teaspoons medium-coarse sea salt
1 1/2 teaspoons coarsely ground black pepper

For roasting:
4 red onions, halved
1 cup white wine or chicken broth

Directions

  1. Preheat oven to 350 degrees F. Have your butcher butterfly pork shoulder to an even 1 inch thickness, you should have a flat piece of meat about 8 inches by 14 inches. Sprinkle with salt and pepper and set aside.
  2. In a sauté pan, heat olive oil until smoking. Add the onion and fennel bulb and sauté until softened and lightly browned, about 10 minutes. Add ground pork, fennel seeds, pepper, rosemary and garlic and cook until the mixture assumes a light color, stirring constantly, about 10 minutes. Allow to cool. Add chopped fennel leaves and eggs and mix well.
  3. Meanwhile, make the rub: in a food processor or by hand, finely chop sage, thyme, rosemary and garlic together. Place mixture in a small bowl; add fennel seeds, salt and pepper. Stir well.
  4. Spread the sausage mixture over pork loin and roll up like a jelly roll. Tie with butchers twine. Slather the entire roast with the rub.
  5. Place in roast pan on top of halved red onions. Place in oven and roast for 2 1/2 hours, until the internal temperature reaches 160 degrees F. After the first 45 minutes, pour half of the wine or chicken broth over the pork. Repeat in another 45 minutes with the remaining wine/broth.
  6. Remove and allow to rest for 10 to 20 minutes. Slice into 1 inch thick pieces and serve.

Serves 8-10.

Recipe For Clams With Udon Noodles 2010-12-03 13:57:32

Ingredients

7 ounces dried udon noodles
1/4 cup plus 1 teaspoon canola oil
2 dozen littleneck clams, scrubbed and rinsed
1 tablespoon minced fresh ginger
1 garlic clove, thinly sliced
1 tablespoon minced flat-leaf parsley
1 1/2 teaspoons Chinese black bean sauce
1/4 cup sake
1 bunch watercress (6 ounces), thick stems discarded
1 1/2 tablespoons oyster sauce
1 tablespoon unsalted butter
1 scallion, thinly sliced
Chili oil, for drizzling

Directions

  1. In a medium saucepan of boiling water, cook the udon until tender, 5 minutes. Drain and toss with 1 teaspoon of the canola oil.
  2. Meanwhile, heat a wok until very hot. Add 2 tablespoons of the canola oil and when it starts smoking, add the clams. Cover and cook for 2 minutes. Add the ginger, garlic, parsley, and black bean sauce and stir-fry for 2 minutes. Add the sake, cover, and cook until the clams open, about 5 minutes longer. Pour the clams and their juices into a large bowl.
  3. Return the wok to high heat and add the remaining 2 tablespoons of canola oil. Add the watercress and stir-fry until crisp-tender, about 2 minutes. Add the udon, oyster sauce, and butter and stir-fry until the udon is evenly coated. Return the clams and any accumulated juices to the wok and stir-fry just until combined. Transfer to the bowl, garnish with the scallion and drizzle with chili oil. Serve immediately.

Serves 4.

Kosher salt and freshly ground pepper
3/4 pound hot or sweet Italian sausages, cut into chunks
1 pint grape tomatoes, halved
3/4 cup dry white wine
16 littleneck clams, scrubbed
Chopped fresh parsley, for topping (optional)

Directions

  1. Cook the polenta as the label directs; keep warm.
  2. Meanwhile, heat the olive oil in a large pot over medium heat. Add the garlic and broccoli rabe, season with salt and pepper and cook until the broccoli rabe is slightly tender, about 6 minutes. Transfer to a plate. Add the sausage to the pot and cook until just brown, breaking it up with a spoon, about 5 minutes. Add the tomatoes and cook until soft, about 2 minutes. Add the wine, bring to a boil and cook 3 minutes.
  3. Add the clams; cover and cook over medium-high heat until the clams open, 5 to 7 minutes (discard any that do not open). Return the broccoli rabe to the pot and season with salt and pepper. Divide the polenta among bowls and top with the sausage-clam mixture and cooking liquid. Sprinkle with parsley, if desired.

If you scratched your head at the words "chocolate hazelnut spread" let me turn it into a phrase that you'll understand: homemade Nutella! This rich, addictive spread that's wildly popular in Europe makes for a luxurious and slightly rustic edible gift. It's absolutely delicious to eat and surprisingly uncomplicated to make. To turn the hazelnuts into a butter, you will need a food processor, but other than that the ingredients are common and the technique easy. Although the recipe calls for hazelnut oil, I didn't feel like buying a whole bottle of the specialty item, so I used canola oil instead. And my Nutella came out scrumptious! Ingredients

1 pound fresh or frozen cranberries
1 cup sugar
2 teaspoons vanilla extract, or 1 vanilla bean, split
2 oranges, peels cut into 2-inch strips
1 (750-ml) bottle vodka

Directions

  1. Place cranberries, sugar and vanilla in a medium saucepan. Place pan over medium heat and stir. Simmer cranberry mixture until the berries burst, about 5 to 6 minutes.
  2. Place orange peels in a large glass container with an airtight lid, or large mason jars with lids. Pour vodka over the orange peels.
  3. Allow the cranberry mixture to cool. Pour the cooled mixture into the glass container(s). Cover tightly and set aside for 1 week.
  4. After 1 week, strain out the cranberries and orange peels and pour mixture into a clean bottle, using a funnel. Store vodka in the refrigerator.

Makes 1 (750 ml) bottle of vodka.

Ingredients

2 cups raw hazelnuts
1/2 cup unsweetened cocoa powder
1 cup powdered sugar
1/2 teaspoon vanilla
1/8 teaspoon salt
3 tablespoons hazelnut oil, more as needed

Directions

  1. Heat the oven to 400 degrees. Spread the hazelnuts evenly over a cookie sheet and roast until they darken and become aromatic, about 10 minutes.
  2. Transfer the hazelnuts to a damp towel and rub to remove the skins.
  3. In a food processor, grind the hazelnuts to a smooth butter, scraping the sides as needed so they process evenly, about 5 minutes.
  4. Add the cocoa, sugar, vanilla, salt and oil to the food processor and continue to process until well blended, about 1 minute. The finished spread should have the consistency of creamy peanut butter; if it is too dry, process in a little extra hazelnut oil until the desired consistency is achieved.
  5. Remove to a container, cover and refrigerate until needed. Allow the spread to come to room temperature before using, as it thickens considerably when refrigerated. It will keep for at least a week.

Makes about 1 1/2 cups.
