They say you never get a second chance to make a first impression, and based on my initial experience with Portuguese sparkling wine, I've been very impressed. Recently I sipped a truly wonderful sparkling, Luis Pato Bruto Espamante ($17), at a tasting led by Eugenio Jardim, sommelier at Traci Des Jardins's San Francisco restaurant Jardinière. "To me, it's inexplicable why Prosecco and Cava would be more popular than this," he commented. I couldn't have agreed more.
The brut bubbly isn't overly perfumed, but just aromatic enough, with fruity-floral notes of apricot and peach and a nice dry finish. With its feminine flavors and pale straw hue, it brought to mind a ballerina fluttering in a tulle dress. It's rare in Portugal to see single-varietal wines, and this is no exception. I didn't recognize the grapes (Maria Gomes is a muscat-like varietal, and Arinto, a lemon-tinged, high-acid grape), but that was irrelevant after one sip. Have you ever tried a Portuguese sparkling wine?
Chicken enchiladas aren't always a fast and easy dinner option, but with a few adjustments, you can surprise your family by serving them as an indulgent midweek meal. Cut extra time by using cubed pieces of already-cooked chicken and pre-grated cheese, and you'll have the steaming casserole in literally 30 minutes. Having friends over for the weekend? Impress a crowd with enchiladas made from slow-cooked layers of poached chicken, homemade enchilada sauce, and roasted pepper salsa. A recipe for either occasion, when you read more.
Fond is French for "base" and commonly refers to the browned bits and caramelized drippings of meat and vegetables that are stuck to the bottom of a pan after sautéing or roasting.
It's often retained as a source of flavor and deglazed with liquid and aromatics like onions and garlic. The fond is the base of a number of classic French pan sauces.
This story was written by member MénagèreModerne and comes from the Kitchen Goddess group in the YumSugar Community. This is a very traditional and popular cake here in Norway. It is normally made with heavy cream or milk, but I prefer to use buttermilk to make it lighter, but still get a very moist and fluffy cake. It is delicious served warm with whipped cream, caramel ice cream or vanilla custard or alone at room temperature with a cup of coffee or tea.
