Ingredients

Nonstick cooking spray
2 cups red pasta sauce, such as portobello mushroom or garden vegetable
6 no-boil lasagna noodles
1/2 of a 15-oz.container ricotta cheese
6 oz. goat cheese or shredded mozzarella cheese (1-1/2 cups)
1 Tbsp. Chianti or other red wine (optional)
1/4 cup finely shredded Parmesan cheese
1 cup roasted red sweet peppers, drained well and cut into strips

Directions

  1. Preheat oven to 350 degrees F. Lightly coat a 2-quart square baking dish with cooking spray.
  2. Spoon 1/3 cup of the sauce in the dish. Top with 2 lasagna noodles.
  3. In a small bowl stir together the ricotta cheese, 1 cup of the goat cheese, and, if desired, the Chianti. Spoon half the mixture over the noodles in the dish. Sprinkle with 2 tablespoons Parmesan. Top with half the red pepper strips. Spoon half the remaining sauce on the pepper layer.
  4. Top with 2 more noodles, the remaining ricotta mixture, and remaining peppers. Add 2 more noodles and the remaining sauce. Dot top with remaining goat cheese and sprinkle with remaining Parmesan.
  5. Cover with foil. Bake for 50 minutes. Let stand, covered, on a wire rack for 20 minutes before serving.

Serves 4-6.

Ingredients

2 large baking potatoes
2 tablespoons butter
1/4 cup grated Parmesan
2 precooked turkey sausages, diced
4 large eggs

Directions

  1. Heat oven to 400° F.
  2. Scrub the potatoes and pierce each with the tines of a fork. Bake until fork-tender, about 45 minutes.
  3. Carefully cut each potato in half. Scoop out the insides and stir in the butter and cheese. Fold in the sausages. Spoon the mixture back into the potato halves, creating a hollow in each center. Break 1 egg into each hollow.
  4. Arrange on a baking sheet and cook 10 to 15 minutes or until set.

Serves 4.

They say you never get a second chance to make a first impression, and based on my initial experience with Portuguese sparkling wine, I've been very impressed.

Recently I sipped a truly wonderful sparkling, Luis Pato Bruto Espamante ($17), at a tasting led by Eugenio Jardim, sommelier at Traci Des Jardins's San Francisco restaurant Jardinière. "To me, it's inexplicable why Prosecco and Cava would be more popular than this," he commented. I couldn't have agreed more.

The brut bubbly isn't overly perfumed, but just aromatic enough, with fruity-floral notes of apricot and peach and a nice dry finish. With its feminine flavors and pale straw hue, it brought to mind a ballerina fluttering in a tulle dress. It's rare in Portugal to see single-varietal wines, and this is no exception. I didn't recognize the grapes (Maria Gomes is a muscat-like varietal, and Arinto, a lemon-tinged, high-acid grape), but that was irrelevant after one sip. 1 1/2 cup flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup brown sugar
3/4 stick butter, melted and lightly cooled
3/4 cup buttermilk
2 eggs
1 teaspoon vanilla extract
1 to 2 green apples (I use 1 1/2), peeled, cored, and cut into about 16 thick slices
1 tablespoon sugar for sprinkling
1/2 teaspoon cinnamon for sprinkling

Directions

1. Preheat your oven to 400 F.  Butter and flour an 8 or 9 inch cake pan with removable bottom.
2. In a bowl, mix together the flour, baking powder, salt, and cinnamon. Set aside.
3. In a larger bowl, mix together well the brown sugar, melted butter, buttermilk, eggs, and vanilla. Slowly add the flour mixture to the wet ingredients.
4. Transfer the mixture to the cake pan.  Add the apple slices on top.
5. Mix together the remaining sugar and cinnamon.  Sprinkle evenly on top of the cake.
6. Bake for about 30-35 minutes or until the top of the cake is golden and cracking and a toothpick inserted in the middle of the cake comes out clean.
7. Let rest for about 10 minutes before removing from the pan. Transfer the cake to a cake stand or a serving plate.

Portions: about 8 slices.
