Ingredients

2 parts silver tequila
1 lime, juiced
1 1/2 parts peach schnapps
1/4 cup white peach puree
Ice

Directions

  1. Fill a cocktail shaker 1/2 of the way with ice. Add all of the ingredients. Shake hard to combine.
  2. Strain into a margarita glass filled with fresh ice. Enjoy!

Makes 2.

Easy Flank Steak Tacos Recipe

Ingredients

1 1/2 pound flank steak, trimmed if necessary
1 tablespoon ground cumin
1 tablespoon chile powder
3/4 teaspoon black pepper
3/4 teaspoon cayenne
1 1/2 teaspoons salt
Corn tortillas, for serving
Your favorite taco toppings: Guacamole, pico de gallo, sour cream, cilantro, cotija cheese, grilled peppers and onions, lime wedges, etc.

Directions

  1. Heat a well-seasoned ridged grill pan (preferably cast-iron) over moderately high heat until beginning to smoke, then brush with oil.
  2. While pan heats, pat steak dry and stir together spices and salt, then rub all over both sides of steak.
  3. Grill steak, turning over once, 9 to 11 minutes total for medium-rare. Transfer to a cutting board and let stand 10 minutes.
  4. Holding knife at a 45-degree angle, thinly slice steak across the grain. Serve with tortillas and toppings.

Serves 6.

Eggplant is an ingredient I rarely cook with. Since it's currently in season, I'm trying to use it more. I'm starting with this classic Italian preparation, known by some as pasta a la Norma. The sauce is made from fresh tomatoes and shallow-fried eggplant. It's seasoned with basil leaves and lots of cheese. I plan on serving mixed greens on the side and a full-bodied, unoaked Chardonnay. There are just some recipes that are so me, and what with my love of ice cream sandwiches, it was only a matter of time before I tackled these babies. With their tart ice cream and sweet berry filling and thin, chewy blondie-like outside, these sandwiches are amazing. They're super fun to eat and the perfect dessert for a crowd. The best thing is that they're indulgent without being too rich and they strike a nice balance between creamy and fruity. I highly recommend you make them, so here's the recipe.
