Curried Carrot Bisque

Inspired by Vegetarian Times Curried Carrot BisqueIngredients1-1/2 tablespoons extra-virgin olive oil 1 bunch carrots with tops still on, sliced (2 cups) 1/2 red bell pepper, seeded and cubed 6 cloves garlic 1 tablespoon curry powder 4 cups vegetable stock 2 cups water 1 medium russet potato, peeled and cubed (1 cup) Directions Heat olive oil in a medium saucepan over medium heat; add carrots, red bell pepper, potatoes, and garlic until fragrant and slightly soft, about five minutes, stirring frequently to prevent garlic from browning.

Curried Carrot Bisque

Recipe For Creamy Carrot Bisque 2011-02-14 22:11:08

Ingredients

1-1/2 tablespoons extra-virgin olive oil
1 bunch carrots with tops still on, sliced (2 cups)
1/2 red bell pepper, seeded and cubed
6 cloves garlic
1 tablespoon curry powder
4 cups vegetable stock
2 cups water
1 medium russet potato, peeled and cubed (1 cup)

Directions

  1. Heat olive oil in a medium saucepan over medium heat; add carrots, red bell pepper, potatoes, and garlic until fragrant and slightly soft, about five minutes, stirring frequently to prevent garlic from browning.
  2. Add in curry powder, and sauté about 1-2 minutes, or until very fragrant.
  3. Pour in vegetable stock, being sure to scrape up all the fond off the bottom of the pan; stir in water.
  4. Let simmer, stirring occasionally, until vegetables are fork-tender, about 45 minutes.
  5. Transfer carefully to a blender, and process until silky smooth, about 2 minutes. Serve warm, and garnish with a carrot top frond.

Serves 6.

Ingredients

½ cup bacon, finely diced
1 Tablespoon butter
1/3 cup onion, finely diced
1/3 cup leek, finely diced
1/3 cup celery, finely diced
1 teaspoons garlic, minced
1 teaspoon chopped fresh thyme
1 cup white wine
4 cups half and half
4 cups chicken broth
Salt and freshly ground black pepper
24 East Coast briny oysters shucked (reserve juice)
Garnish:
¼ cup celery, finely diced
¼ cup potato blanched
¼ cup fine diced crispy bacon

Directions

  1. Cook bacon over medium heat in a heavy duty sauce pot until well browned but still fatty, about 8-10 minutes.
  2. Add the butter, onions, leeks and celery, cook covered for 10 minutes, stirring occasionally.
  3. Add the garlic and cook for one more minute covered.
  4. Add the thyme and white wine, reduce until almost dry, about 7-10 minutes.
  5. Add the half and half and reserved oyster juice. Bring to a simmer and cook for 5 minutes. It will be “broken," but it is OK. Blend the soup with a hand-held or counter-top blender. Then strain.
  6. Reheat the oysters in the chowder on very low heat, Do NOT BOIL.
    Season with salt and pepper.
  7. Add the garnish and serve hot.

Serves 6.

Finally, we have an update on Chipotle's new Asian-themed fast-casual eatery slated to open this year. According to Nation's Restaurant News, it's already applied to register ShopHouse Southeast Asian Kitchen for trademark.

With this piece of information, industry analysts are champing at the bit, speculating that the name "strongly hints that the new Asian restaurant will not limit itself to the cuisine of any one country." One expert has even discovered possible restaurant logos.

Since it's just me and I try to practice meatless Mondays, I'm making grilled cheese sandwiches. Not just any grilled cheese, but one with caramelized pears and onions and three different kinds of cheese — yum! For dessert, I made chocolate diablo cake. I'll pair both with sparkling Rosé.

One way to affordably enjoy farm-raised oysters is to purchase them at the grocery store and eat them at home.

One way to affordably enjoy farm-raised oysters is to purchase them at the grocery store and eat them at home. The only problem is, you have to shuck the oysters beforehand! To make shucking quicker, take a tip from my local fishmonger and give the oysters a cold bath. Fill a large bowl with cold water and salt liberally, then add the oysters and soak for 10 minutes. This will liven them up and loosen the shells — making them easier to pop open.
