The 10th annual South Beach Wine & Food Festival wasn't just an opportunity to catch Rachael Ray cooking in person and chow down on exotic ingredients. It was also a great time to get to know our favorite chefs firsthand.

I was floored by restaurateur and Food Network chef Scott Conant. Not only is the Chopped judge and host of 24 Hour Restaurant Battle a wisecracking barrel of laughs, but he's also incredibly humble.

When I declared his polenta to be "the best polenta I've ever had," he quipped, "Then you need to eat out more." At the Scarpetta Miami bar, he made sure we were settled in with mojitos, then joined us for a chat. For the whole conversation, keep reading.

Taco Bell Offers Discount on Beef Crunchwraps

Although we're only two months into the year, it looks like the Taco Bell beef scandal is shaping up to be one of the top stories of 2011.

Although we're only two months into the year, it looks like the Taco Bell beef scandal is shaping up to be one of the top stories of 2011. The latest in the ongoing saga that started with a woman suing the chain for falsely labeling its "seasoned beef"? Another deal! It seems that giving away 1 million free tacos isn't enough to convince consumers its beef is the real thing. Now it's also discounting the pricey crunchwrap supreme.

From today until March 5, Bell fans can enjoy a crunchy beef quesadilla for just 88 cents (originally they are $2.39). The campaign is supported by a series of ads that feature real Taco Bell employees promoting the beef. The crazy thing is all this Taco Bell news has got me craving my high-school order: a beef double decker taco. Will you take the Tex-Mex eatery up on its offer?

Marinated Baked Goat Cheese

Marinated Baked Goat Cheese

Ingredients

6 small rounds goat cheese, about 1 oz. each
1/2 cup extra-virgin lemon olive oil or regular olive oil
1/4 cup walnut oil
2 tbsp. red wine vinegar
1 tbsp. chopped fresh lemon thyme or thyme
1 tbsp. finely chopped chives
1 tbsp. whole black peppercorns
1/2 tsp. crushed red chili flakes
3 dried bay leaves
Kosher salt, to taste
Toasted country-style bread or crackers, for serving

Directions

  1. Put goat cheese rounds into an 8-by-8-inch baking dish. In a medium bowl, whisk together olive oil, walnut oil, vinegar, thyme, chives, peppercorns, chili flakes, and bay leaves; pour over goat cheese. Cover dish with plastic wrap and let sit at room temperature, turning occasionally, for 1 hour or refrigerate for up to 1 week.
  2. Heat oven to 425°. Transfer dish to a baking sheet, unwrap, season cheese with salt, and bake until warmed through and slightly soft, 6–8 minutes. To serve, transfer cheese to a platter and serve with toasted bread or crackers.

Serves 6 to 8.

At the Burger Bash at the South Beach Wine and Food Festival, there were tons of creative and delicious burgers from lamb goat cheese burgers to horseradish and crispy onion burgers. However, the most interesting by far was the Love Shack's Wild Love burger.

Chef Tim Love combined elk meat with foie gras to make a patty that was incredibly juicy and unlike any of the other burgers at the event. For a nice balance of bittersweet flavors to contrast the rich meat mixture, it was topped with arugula and huckleberry jam.

It was definitely one of my top burgers, and I was surprised because I'd never had elk before! How about you?

The self-proclaimed "burger and taco girl" sipped a kumquat margarita while she made fish tacos and a French bistro-inspired burger in a slinky black dress. Instead of focusing on teaching the crowd how to cook, Ray declared that "we're going to have a nice chat," and invited people to stand up and ask her questions. The result was an interesting look at Rachael Ray, the person, rather than Rachael Ray, the mega culinary personality. Tomorrow only, in celebration of National Pancake Day, the breakfast chain is offering a free short stack of pancakes from 7 a.m. to 10 p.m. at participating stores nationwide. In return, IHOP hopes you'll be generous enough to consider a donation to its favorite charity, the Children's Miracle Network Hospitals.
