Ingredients

1 white onion, peeled and quartered
1 fresh poblano chile or 2 Anaheim chiles (5 oz. total)
1 pound fresh tomatillos, husked
3 large garlic cloves, peeled
2 or 3 canned chipotle chiles in adobo sauce, plus 1 tbsp. sauce
1/4 cup cilantro leaves
1 tablespoon fresh lime juice
Salt

Directions

  1. Put onion, fresh chile, tomatillos, and garlic on a baking sheet. Broil 4 to 5 in. from heat, turning once, until blackened, 8 to 10 minutes total. Let cool.
  2. Peel, stem, and seed fresh chile and cut into chunks. In a blender or food processor, whirl broiled onion, chile, tomatillos, garlic, chipotle chiles with sauce, cilantro, and lime juice until coarsely puréed. Season to taste with salt.

Makes 2 cups.

This recipe for a Pimm's Cooler uses England's most popular spirit, Pimm's No 1. You may have to seek it out at Beverages and More (I tried at Safeway first, but they didn't carry it), but trust me, it's worth it: this drink is absolutely amazing! Rarely do I make the same beverage twice and I've already made this one three times in the past week. It's refreshing, fruity, and perfectly balanced. Plus it's got a gorgeous hue and pretty garnishes. You simply must make this cooler, so get the recipe now.

Ingredients

2 mint sprigs
2 lemon slices
2 orange slices
1 cucumber wheel, 1 cucumber spear and 1 cucumber ribbon (optional)
1 strawberry, halved
3/4 ounce fresh lemon juice
Ice
2 ounces Pimm's No. 1 (English gin-based aperitif)
1/2 ounce Creole Shrub or Grand Marnier
3 ounces chilled ginger beer*

Directions

  1. In a cocktail shaker, muddle the leaves of 1 mint sprig with 1 lemon slice, 1 orange slice, the cucumber wheel, half of the strawberry and the lemon juice.
  2. Add ice and the Pimm's and Creole Shrubb. Shake well and strain into an ice-filled pilsner glass.
  3. Stir in the ginger beer and garnish with the remaining mint sprig, lemon slice, orange slice, cucumber spear, cucumber ribbon and strawberry half.

Makes 1 drink.


*If you can't find ginger beer, use ginger ale.

Our very own Kristy Korcz started a new OnSugar blog, Target Wine Club — a great way to explore new wines on a budget! First up: an Argentinean Malbec.

I half-expected this hybrid to kick me in the back of my palate on the way down (isn't that what bold malbecs are known for?), but it totally didn't. I was a little disappointed with the "fake" rubber cork (especially since this is an earth-friendly, fair trade vintage), but after a little investigation, it turns out it's probably better this way — my vino won't be "tainted" by all those natural fibers and junk. The bottle said it went well with grilled meats, which I can fully attest to, if by "grilled meats" you mean the heat and serve chicken nuggets from the frozen food aisle. Yum-o.

The eight-tier fruitcake, which was made by Fiona Cairns, was covered in white frosting and had ornate rose detailing. It's beautiful and I'm sure it tasted delicious!
