When it comes to pairing cheese with an alcoholic beverage, most people think of wine.

When it comes to pairing cheese with an alcoholic beverage, most people think of wine. However, beer is actually an excellent choice for serving with cheese. I was skeptical at first, but after attending a seminar on cheese and beer pairings hosted by the Milk Board of Wisconsin, I'm a total convert. Cheese and beer do work well together!

What makes them perfect for pairing? Well, beer and cheese have a rich joint history. The grain used to make beer on farms or in monasteries was, in many cases, the same grain that was fed to the animals that produce the cheese. Beer and cheese can also take on similar flavor profiles; both can be described as earthy, yeasty, musty, carmeley, etc. Interested in learning more about this popular trend? Ingredients

5 large apricots, pitted, split, and sliced
5 large, ripe figs, quartered
2 tablespoons maple syrup
1/2 cup ricotta or mascarpone cheese
4 slices levain bread, each cut about 1" thick

Directions

  1. Preheat the oven to 350ºF. Combine the sliced apricots and the quartered figs in a medium roasting pan; drizzle with maple syrup and toss to coat. Roast at 350ºF for 15 minutes; raise temperature to 400ºF and bake for another 15 minutes. Let cool.
  2. Spread each slice of bread with a generous layer of cheese (about 2 tablespoons per slice for a large piece of bread). Top the four pieces of bread evenly with roasted fruit and its juices.

Serves 4.

Since I'm sorbet's number-one fan, and because my last adventure with lemon-buttermilk sorbet went off without a hitch, I decided to try my hand at capturing cantaloupe at its peak.

Unlike ice cream, sorbet doesn't require the finicky step of tempering, so I was certain the method would be more forgiving. Not so much: I modified a recipe from Sunset's One-Block Feast cookbook, subbing honey for honey syrup, then ran it through an ice cream maker as usual. The next-day result? A frozen block of ice that dissipated into granita-like chunks when I tried to scoop it.

Meet my favorite blueberry cake.  It's got a great texture thanks to chopped almonds scattered throughout, it's not overly sweet, and it's really easy to make--you don't even need a mixer.  If you like blueberry muffins in the morning, this cake makes a great substitution, but it can also be tonight's dessert thanks to its pretty sugar-sprinkled top.  And I'll go ahead and tell you that it works beautifully with vanilla ice cream, although you probably already guessed that.

I first met this cake ten years ago, in an issue of Cooking Light.  Over the past decade, I've made it many times, altering flavorings a bit, augmenting the amount of butter, trying different additions (the original calls for pecans and orange zest).  I've completely forgotten about it for long stretches, maybe even going three years without the slightest thought of it--but when I remember it, I'm so happy.  This cake makes me happy.  It is the cake of great happiness.
