Turkey Club Sandwich

Turkey Club Sandwich Recipe

Ingredients

3 slices toasted white or wheat bread
Mayonnaise
Honey mustard
1/2 avocado, sliced
3 slices smoked or roasted turkey
2 slices cheddar cheese
4 slices cooked bacon
1 tomato, sliced
1 leaf butter lettuce
4 toothpicks or decorative food picks
Vegetable or potato chips (optional), for serving

Directions

  1. Arrange toast side by side on a clean surface. Slather mayonnaise and mustard on one side of each piece of toast.
  2. On first piece of toast, spread and press avocado evenly. Place turkey over avocado, and then place two slices of cheddar cheese over bread.
  3. Next, place second slice of toast over cheese. Snap bacon in half and place it across toast. Lay sliced tomato over bacon, and then place lettuce over tomato. Finally, place third slice of bread on top, mayonnaise side facing down.
  4. Pin the layers of the sandwich together by evenly and securely piercing them with toothpicks, forming a diamond pattern. With a serrated knife, cut diagonally to left and diagonally to right to form four triangle pieces, each piece secured with a toothpick.
  5. Split sandwich between two plates; serve alongside chips, if desired.

Makes 1 large sandwich.

Trendspotting: Southeast Asian Fast-Casual Restaurants

In the past year, there's been significant growth nationwide in the number of fast-casual eateries, from burger joints to healthier comfort-food fixtures.

In the past year, there's been significant growth nationwide in the number of fast-casual eateries, from burger joints to healthier comfort-food fixtures. The latest craze we've noticed hitting this scene? Asian-themed chain restaurants.

Chipotle could've tackled a number of ethnic eats, so the Mexican chain certainly caught our attention when it unveiled its plan for ShopHouse Southeast Asian Kitchen, "inspired by the traditional shophouses through Thailand, Malaysia, and Vietnam." Then we raised our eyebrows when a former chef at San Francisco's renowned Slanted Door restaurant opened the first of what will be several Bay Area locations of Asian Box, a healthier riff on Asian street food.

Meanwhile, Canada-based Wok Box has been preparing to bring its stir-fry boxes and curry dishes to the western part of the United States this year. And just this week, a former Hooters chef announced his new venture, a minichain of Atlanta-based Latin fusion restaurants bearing the name Taqueria Tsunami.

Regardless of where diners are in the country, it's clear they're on the lookout for the explosive flavor combinations that come from Southeast Asian cuisines. Are you excited at the prospect of more Southeast Asian cuisine in your neck of the woods?

Blueberry Cornbread Breakfast Muffins

Blueberry Cornbread Muffins Recipe

Ingredients

Nonstick cooking spray
1/4 cup butter
3/4 cup cornmeal
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
Zest of 1 lemon
1/2 cup plain Greek yogurt
1/2 cup honey
2 eggs
1 teaspoon lemon extract
3/4 cup (5 ounces) fresh blueberries

Directions

  1. Preheat the oven to 375ºF. Spray a muffin tin with nonstick cooking spray. Melt the butter in the microwave or on the stovetop in a small saucepan. Set aside to cool.
  2. In a large bowl, whisk together the cornmeal, all-purpose flour, baking powder, salt, and lemon zest.
  3. In a separate bowl, whisk together the yogurt, honey, eggs, butter, and lemon extract. Slowly whisk in the flour mixture until all of the ingredients are thoroughly combined. Fold in the blueberries.
  4. Fill the muffin tin with batter until two-thirds full. Bake in the oven for 15 to 18 minutes, or until a toothpick test comes out clean. Transfer the muffins to a wire rack to cool.

Makes 12 muffins.

Discover Fenugreek With a Fast Peachy Salad

Fenugreek, a spice used frequently in Indian cooking, might easily be confused with similar-sounding fennel seeds, but the likeness ends there.

Fenugreek actually has a maple scent and a caramel flavor. It's primarily used in curries, but I like to use it to season everything from pickles and chutneys to breads and soups. Recently, I used it to bring out sweetness in a warm-weather salad.

In this salad, fenugreek-studded cheese makes an appearance, adding contrast to tart greens that have been tossed in white balsamic vinaigrette. LaClare Farms makes an incredible aged, Gouda-style goat cheese with fenugreek that grates and shreds easily, so it's an ideal alternative to typical Parmesan used in salads.
