Seared Scallops in a White Wine Butter Sauce

Ingredients

5-6 large scallops
Cooking spray
1/3 cup white wine
1 tablespoon minced white onion
3 tablespoons chilled butter
1 1/2 tablespoons chopped fresh parsley
1 1/2 tablespoons chopped fresh green onion
Salt and pepper, to taste

Directions

  1. Place a skillet over medium-high heat until thoroughly heated. Coat scallops with cooking spray, and then salt and pepper right before placing on skillet. Carefully place scallops in hot skillet. Sear 3-5 minutes or until browned, flip sides, and cook another 3-5 minutes. Remove scallops from pan, and keep them warm in an oven at 150-175ºF.
  2. In same pan, add wine to deglaze the pan, or use a wooden spoon to scrape the brown bits from the pan. Add onion, and bring wine to a boil. Boil for 5 minutes or until liquid reduces to 2 tablespoons. Over low heat, whisk in butter cubes, 1 tablespoon at a time, until fully incorporated. Stir in parsley and green onion. Salt and pepper to taste. Serve scallops with sauce.

Serves 2.

I don't know about you, but I've still got a hangover of sorts from the massive amount of good food I ate this Memorial Day weekend.

I don't know about you, but I've still got a hangover of sorts from the massive amount of good food I ate this Memorial Day weekend. On Friday, I hit up the San Francisco Michelin-starred La Folie lounge, where I grazed all night on truffled popcorn, smoked salmon lollipops, and lobster mac and cheese. Saturday morning was the perfect day for a long city stroll and some dim sum, which I paired with milk tea tapioca. On Sunday, I cooked up pasta with kale and walnut pesto, and on the Memorial Day holiday itself, the grill was my friend. We chowed down on curry-spiced burgers with cucumber yogurt and a side of Guy Fieri's four-bean relish. It was my first Guy Fieri recipe, and I'm happy to say that it turned out to be a solid one.

Ingredients

1 tablespoon olive oil
1 onion, chopped
5 small garlic cloves, minced
1 pound ground beef
1 teaspoon dried Mexican oregano
1 teaspoon ground cumin
2 tablespoons Mexican chili powder
1 1/2 cups canned tomatoes
2-6 dashes hot sauce or to taste
Salt, to taste

Directions

  1. Heat oil over medium heat in a Dutch oven or pot. Add onion and garlic and cook until soft, about 7 minutes.
  2. Add ground beef and cook, breaking up with a wooden spoon, until no longer pink, about 5 minutes.
  3. Add oregano, cumin, chili powder, tomatoes, hot sauce, salt, and 1/2 cup hot water. Bring to a boil, cover, lower heat, and simmer for about 1 hour, skimming off the fat as it cooks.

Serves 4.

Fruit and Granola Bars Are a Snack Worth Looking Forward To

Maybe it's due to the fact that I grew up overdosing on them, but as an adult, I've never been much of a granola bar fan.

Maybe it's due to the fact that I grew up overdosing on them, but as an adult, I've never been much of a granola bar fan. That is, until I made these granola bars.

I don't know how else to explain this discrepancy, except to say that homemade granola bars, not unlike homemade granola, taste utterly different from the conventional kind. Unlike the store-bought variety, these bars are pliable on the tooth, imbued with Indian spices like cardamom and cinnamon, and filled to the gills with nothing but toasted oats, seeds, and dried fruit.

This recipe, which comes courtesy of Michelle Obama and the White House kitchen, is simple enough. Still, it takes some finesse to nail down the last cutting bit without making a huge mess. The key, I discovered, is to let them cool completely (this takes hours), then cut them using a serrated knife that's dipped in hot water in between slicings.
