Blueberry Dutch Baby With Nectarines and Ginger Syrup
While I particularly enjoy the spicy heat of ginger syrup, maple syrup is also a solid choice, or you can always buy premade ginger syrup. Feel free to use whatever stone fruit looks best — peaches, plums, or even halved cherries would be welcome to the party, in lieu of the sliced nectarines.

Ingredients
2 large eggs
1/2 cup whole milk
1/2 cup all-purpose flour
1 1/2 teaspoons granulated sugar
Heaping 1/4 teaspoon kosher salt
1 tablespoon unsalted butter
1/2 cup blueberries
1 large nectarine, pitted and sliced in 1/2-inch pieces
Ginger syrup, for drizzling
Directions
- Preheat the oven to 400ºF, setting two 6-1/2-inch cast iron skillets
in the oven at the same time.
- Blend together the eggs, milk, flour, sugar, and salt in a blender or food processor.
- Carefully remove the hot skillets from the oven, and put 1/2 tablespoon butter in each; swirl to coat as it melts. Split the batter between the two skillets, and dot with blueberries (splitting evenly between the two skillets). Place in the oven and cook for 15 to 18 minutes or until the dutch baby has puffed up considerably, the center is set, and the edges are golden brown. Avoid opening the oven door more than necessary as it will lower the oven temperature, which will result in a less puffy end result.
- Garnish with sliced nectarines, and drizzle with ginger syrup.
Makes 2 dutch babies.
PB & J Blended Coffee
This recipe involves a 12-hour cold brewed coffee process, but the coffee can be prepared up to a week ahead of time.
The cold-brewed coffee is actually concentrated. If you have any cold-brewed coffee left over, add one part coffee concentrate to three parts water, and serve it over ice.

PB & J Blended Coffee
Information

- Drinks, Coffee

Ingredients
1-1/2 cups (4 ounces) coffee grounds
2-1/2 cups water
1/2 cup whole milk
1-1/2 cups of ice
2 tablespoons of sugar
Whipped cream, for garnish
Homemade or store-bought strawberry sauce, for drizzling*
1/4 cup roasted peanuts, crushed
Directions
- Make cold-brewed coffee: Add 1/2 cup of water to coffee grounds, stirring gently. Add the remaining 2 cups water, agitating the grounds as little as possible. Cover and let steep at room temperature for 12 hours.
- Slowly strain the coffee ground mixture with a paper filter, which will take 5-10 minutes or until all liquid has seeped through. If the coffee looks cloudy, strain again using a new filter. Store, refrigerated, for up to a week.
- Make blended PB&J coffee: In a blender, combine 1-1/2 cups cold brewed coffee, milk, ice, and sugar until slushy, adding more milk if drink is too thick, and more ice if beverage is too thin.
- Divide blended coffee between two cups, top with whipped cream, and finish with a generous drizzle of strawberry sauce. Garnish with crushed peanuts.
Serves 2.
*To make a batch of homemade strawberry sauce, quarter the recipe for strawberry jam, skip the step of adding pectin, and strain it before using.
Make Your Own Ginger Simple Syrup
I'm a bit of a cocktail fanatic, which means that I place almost as much weight on the strength of a restaurant's bar list as its menu when making dining-out decisions. That said, the fancy creations I crave often come with an equally precious price point, so I'm always looking for a way to replicate my favorite boozy treats at home. For this reason, I prefer keeping the basic accoutrements on hand for concocting a simple cocktail when a craving hits.
I turn to simple syrups to flavor and sweeten cocktails, and when I'm looking for a particularly punchy ginger kick, I often pull out a bottle of my homemade ginger simple syrup. And while ginger simple syrup's most obvious application is in the cocktails I crave, I've managed to find a whole host of secondary uses.
Keep reading to see what they are — and get the ginger simple syrup recipe.
Wine of the Day: 2011 Yalumba Christobel's Eden Valley Riesling
If there were ever a wine to win the title of Most Beloved Wine at Sugar HQ, it'd have to be Yalumba's 2011 Christobel's Eden Valley Riesling, because it emptied before all taste-test participants were able to try it. The striking botanical illustrations on the label, which feature flowers in bold coral and lavender, attracted the PopSugar flock at first sight. Anxious wine tasters loved the immediate gratification of the twist top and were excited by the thought of bringing this beauty along to picnics or parks.
The bottle's floral, nectar-like scent resembles German Rieslings, but upon first sip, the Australian wine startled us with its light body, dry quality, and smooth finish. It remarkably had the essence of nectarine and honey without any of the sugary sweetness that is traditionally associated with the varietal. Everyone agreed it was a friendly, day-drinking wine, which probably explains why it was guzzled so quickly, and for $12, I'm sure our editors will be doing the same thing again. I think we've found our new Summer weekend wine — what's yours?
