Anything sparkling turns me into a giddy girl, but I was particularly fond of this 2008 Raumland Blanc de Noirs Vintage Brut ($45) from Germany. I love a Pinot Noir sparkling wine aged to perfection, and this fits the bill.

Creamy, smooth, and packed with crisp bubbles, this wine has a complex and developed flavor that is everything I would expect from a sparkling wine produced in the méthode traditionnelle. This mellow vintage brut should be stored away until a noteworthy celebration calls for its popping. And because it has such a delicate flavor profile, it should be enjoyed on its own.

We're madly jealous of Food Orleans's recent meal at the chef's table in the storied Commander's Palace in New Orleans; a visit to this lavish restaurant has been on our travel bucket list for years!


This is Commander's Palace. If it looks like a fairytale building, that's because it is. It's a place where stories are told, surprises happen at any minute, and everyone works together to entertain you and take care of everything you could possibly want. Prepare to be a princess, in other words.

Any time you eat at Commander's, it's special; from brunch on any Sunday to lunch on Thursday to dinner on Saturday night. But the best times to eat there are on holidays, like Thanksgiving, or special occasions: the birthdays, graduations, and anniversaries that are the most important days in the story of your life. I had a big ol' birthday this month; I turned 40. All I wanted was to eat at the Chef's Table at Commander's, and Paul, my wonderful love, he made it happen.

The Chef's Table is the ultimate experience of what Commander's Palace really does, which is nothing short of magic. The table is in the kitchen, right behind the grill line; you're not sheltered away in a corner — you're right in the middle of it. And the Commander's kitchen is quiet, controlled, and all business. As the sous chef, Jason Wells, who prepared most of our dishes that night explained to us (above), you can easily have a conversation in the Commander's kitchen, because there's no yelling. It's not like any other restaurant kitchen I've ever seen or heard of, save The French Laundry or Daniel or other places in the top tier of restaurants in the world. And the theatre of the kitchen is part of the experience of sitting at the Chef's Table.

Asparagus Ribbon Pizza

Don't have a cast-iron skillet?

Don't have a cast-iron skillet? Simply follow the same procedure using a flipped-over preheated baking sheet instead. You may need to bake the pizza for slightly longer, as cast iron retains heat better, so follow visual cues to determine doneness (it will have a brown and puffy crust).

Asparagus Ribbon Pizza

Asparagus Pizza With Goat Cheese Recipe

Ingredients

Wheat bran or cornmeal, for dusting
1 ball pizza dough (store-bought is OK)
1/2 cup full-fat ricotta
Finely grated zest of 1 lemon
Kosher salt
5-8 asparagus stalks, woody ends snapped off, shaved into ribbons with a vegetable peeler
2-3 ounces fresh goat cheese, crumbled
2 eggs
A large handful of pea shoots, for garnish
Balsamic reduction, for drizzling
Extra-virgin olive oil, for drizzling

Directions

  1. Preheat oven to 500ºF, setting a 10- to 12-inch cast-iron skillet in the oven at the same time.
  2. Dust a large cutting board or clean countertop with wheat bran or cornmeal (this will ensure that the dough does not stick). Roll or stretch out the ball of pizza dough so that it's approximately a 10-inch circle (it will be slightly smaller if you're using a 10-inch skillet).
  3. In a small mixing bowl, mix together the ricotta, lemon zest, and a hefty pinch of kosher salt. Spread the ricotta mixture evenly over the pizza dough, leaving a one-inch border for the crust.
  4. Remove the cast-iron skillet from the oven, flip it upside down, and rub the exposed surface with oil using a paper towel. Carefully and quickly, arrange the pizza dough on top of the skillet.
  5. Arrange the asparagus ribbons over the ricotta mixture, and dot with crumbled goat cheese. Put it back in the oven and cook for eight minutes, or until the crust is browned and puffy.
  6. While the pizza bakes, crack each egg into a separate ramekin or custard cup. Remove the pizza from the oven and slide the eggs from the ramekins to the pizza. Put the pizza back in the oven and cook until the egg white is opaque and just barely set. The eggs will look ever so slightly underdone, but they will continue to cook with the residual heat of the pizza dough.
  7. Move the pizza to a cutting board and generously blanket the pizza with pea shoots, then drizzle with balsamic reduction and olive oil. Sprinkle the eggs lightly with salt.

Serves two as a main course.
