St. Patrick's Day is 'round the corner, therefore we're giving Irish cuisine a gander. While I can only claim to be Irish-ish, I do know a thing or two about marrying potatoes and butter.

Colcannon is a traditional Irish dish that is basically mashed potatoes mixed with kale or cabbage, green onion, and Irish bacon, which is similar to Canadian bacon. Colcannon is a revered dish in Ireland; there are even songs written about it! While I'm not likely to write a song about my colcannon rendition, I will sing its praises. In addition to kale and green onions, this dish contains pancetta, because I like thin, crispy, bacon-like bits in my mashed potatoes. Who knew kale could taste so good, enveloped in fluffy mashed potatoes and salty pieces of pancetta?

Dried fruit snacks are making a huge resurgence in the food market as of late, but these Simple & Crisp dried fruit crisps ($11) are an ingenious spin. While you can snack on them as is, the thin, cylindrical shape makes them ideal cracker substitutes for prosciutto, foie gras, or cheese.


We tried the whole line (including pear and orange), but we decided the apple is our favorite. Our tasters loved the tart flavor and easy-to-chew, almost juicy texture. Upon biting, the apple chip instantly dissolves, and tasters imagined snacking on these all day with a jar of peanut butter or some caramel.

The $11 per container is a hefty sum, even if the produce is organic and picked at optimal ripeness. However, for the special occasion party, I think these crisps would be a great addition to a charcuterie platter. You can find the crisps at Whole Foods or order them online at Dean and Deluca.

Bobby Flay may have taken top honors at the South Beach Wine and Food Festival's Burger Bash this past weekend, but it was tacos — another category he's well versed in — that he tackled at a cooking demo on Sunday.


Bobby Flay may have taken top honors at the South Beach Wine and Food Festival's Burger Bash this past weekend, but it was tacos — another category he's well versed in — that he tackled at a cooking demo on Sunday. His passion for the subject quickly became apparent as he made spicy jerk chicken tacos topped with red cabbage slaw and habañero hot sauce as well as an enticing stone crab and orange mojo stunner. He even proclaimed them a perfect food — "you can make anything a taco," he said — later admitting that they're a food he consistently craves, especially "late at night [after he's] had a few cocktails with friends." Here are a few tips and tricks the chef had to impart:

  • Prioritize textural contrast: Both of Flay's tacos had a crunchy element: a red cabbage slaw for the jerk chicken and a deep-fried blue corn tortilla for the stone crab. He emphasized waiting until the last minute to dress the slaw so that it would stay crisp.
  • Overseason taco fillings. "Otherwise, it's going to be fighting through the tortilla," he said. A bland tortilla can overpower the other components, making for an uninteresting bite.

Soul-Soothing Supper: Hoisin Braised Short Ribs

Up until a couple years back, I was a staunch red meat avoider.

Up until a couple years back, I was a staunch red meat avoider. Not because I was a vegetarian or had moral qualms over its consumption, but rather as a matter of taste. Steak, burgers, meatballs, and the whole lot of much-beloved American classics held no sway over my palate, until one simple but revelatory bite changed it all. No, it wasn't a dry-aged steak or juicy Shake Shack burger that changed my mind — though I'm now irretrievably enamored with both — but rather, a bite of tender, succulent, braised short ribs.

Little by little I came to crave these tender, boldly flavored bites, soon embracing carpaccio, tartare, roasted bone marrow, and even grilled beef tongue. But it's still tender, falling-off-the-bone short ribs that get me every time. So when I came across this beer and hoisin braised stunner of a recipe, I knew I'd have to simmer up a batch posthaste, as it would inevitably enter my meal rotation. Thankfully, I was right on this account and then some. Slightly sweet, tangy, and full of deeply meaty flavor, they're so lovely that I'd wager they'd have made a red meat convert of me far earlier had I only tried them years back.
