Coconut Macaroon & Creme Brulee Ice Cream Sandwiches

8 small coconut macaroons
1/2-1 cup Creme Brulee ice cream (suggested: Ben & Jerry's)
Place cookies in pairs on a plate or cookie sheet top side down.Top one cookie with a heaping tablespoon of ice cream. Place its pair on top of the ice cream and press down gently.Quickly put the sandwiches in the freezer to prevent melting. Freeze for an hour or until firm.
