Although a grand breakfast like eggs Benedict might usually be reserved for weekends, we've happened upon National Eggs Benedict Day, so there's no excuse not to eat the country's favorite brunch item at just about any hour today.

Before you get started poaching your own eggs, however, take a look at the variations you might want to take on for this American classic.

Classic eggs Benedict is my favorite brunch dish; if it's on a restaurant's menu, I'll order it nine times out of 10. However, when I'm cooking brunch at home, I prefer to make a lighter, meat-free Benedict. Instead of Canadian bacon, I use roasted tomatoes and mashed avocado. The butter-heavy Hollandaise sauce is replaced with a creamy parmesan cheese sauce. Although you could use poached eggs, most of the time I'm lazy and simply used fried eggs. This dish is one that my mom loves, so if you're looking for something to make for your mother on Sunday, I highly recommend the California Benedict! Get the recipe now.

Today is National Eggs Benedict day. Since eggs Benedict is my favorite brunch dish of all time, I couldn't let the holiday pass without putting together a quiz. The classic bennie is a layered masterpiece consisting of an English muffin, ham, poached egg, and a velvety hollandaise sauce. The Benedict is so wildly popular that it's inspired many spinoffs. Maybe I should check my horoscope because I feel like it's my lucky week. Last Thursday it was National Grilled Cheese Day (my all-time favorite simple sandwich) and today is National Eggs Benedict Day (my all-time favorite brunch dish)! Although I would love to tell you exactly how this delicious poached egg masterpiece received its name, I can't because the exact origins of the dish remain unclear. I will confess that I've never made homemade Eggs Benedict. Well not completely, I know how to make a perfect poached egg but I usually use store bought Hollandaise Sauce (I hate to admit that!). For some strange unknown reason I am afraid to make this mixture of egg yolk, lemon juice, and butter sauce. Since it's National Eggs Benedict Day, perhaps I'll give it a try.
