Savory peach dishes are a Summer favorite, and if peaches can pair well with pancetta and basil as an appetizer, why not throw them all into a grilled cheese sandwich? I did just that on a recent warm evening. The resulting sandwich was absolutely scrumptious! It's a great combination of flavors (salty and sweet) and textures (crispy and gooey). Putting peaches in a grilled cheese sandwich may sound crazy, but trust me, it really works! To give this quick and easy recipe a try, read on for the technique.
How to Make a Grilled Mac and Cheese Sandwich
Grilled cheese sandwiches are so hot right now! There are cookbooks devoted to them, contests that feature them, and food trucks that drive around making them. There are also restaurants that have entire grilled cheese menus! Last night I went to San Francisco's first grilled cheese eatery, The America Grilled Cheese Kitchen, for a demonstration hosted by Tillamook cheese.
The event was a promotion of the Loaf Love Tour, a bus that is traveling the country "bringing tasty cheese to the people." After sampling some of the restaurant's most sought-after creations, chef Heidi Gibson taught the small crowd how to make a grilled macaroni and cheese sandwich. To learn more about the newest craze in the grilled cheese world and to get Gibson's technique for making one at home, read on.
Egg in a Nest, Meet the Grilled Cheese
The grilled cheese sandwich is one of life's simplest pleasures, while an egg in a nest is a deliciously nostalgic breakfast. What happens when the two come together? You get one spectacular sandwich! Although this recipe is a little more complex then making the two dishes separately, it's worth the effort. It has you discard the center portion of the bread, but I decided to make a mini sandwich and serve it with the larger grilled egg and cheese. If you enjoy bacon in your egg sandwiches, sauté a couple of diced pieces and cook the spinach-onion mixture with the bacon. Interested in the amazing recipe? Read more.
