I love sandwiches and cocktails — often together. But I've never eaten a grilled cheese and thought, "you know what would be good with this? A martini." Apparently, that comfort food and booze combo makes sense at Beecher's.

The Seattle cheese emporium, which recently opened in NYC, has an off-menu item called the grilled cheese martini, which is exactly what it sounds like: grilled cheese sandwich-infused vodka, shaken with fresh tomatoes, muddled basil, and tomato juice.

Now here's the really terrifying part: Beecher's isn't the first to mix up a grilled cheese martini. Clive's in Victoria, BC, makes one with grilled cheese rum.

Jonathan Kaplan, the creator of the Flip camera, will debut his new eatery, The Melt, later this Summer. The Melt will offer diners grilled cheese sandwiches and soup pairings, made with farm-fresh and all-natural ingredients. Yesterday at Sugar's five-year anniversary party, we got a preview of the new restaurant's offerings. Learn more about their sandwiches and see what we thought of them.

Grilled cheese sandwiches are so hot right now! There are cookbooks devoted to them, contests that feature them, and food trucks that drive around making them. There are also restaurants that have entire grilled cheese menus! Last night I went to San Francisco's first grilled cheese eatery, The America Grilled Cheese Kitchen, for a demonstration hosted by Tillamook cheese.

The event was a promotion of the Loaf Love Tour, a bus that is traveling the country "bringing tasty cheese to the people." After sampling some of the restaurant's most sought-after creations, chef Heidi Gibson taught the small crowd how to make a grilled macaroni and cheese sandwich.
