Michael Chiarello's Technique For Homemade Pizza Dough

I'm currently obsessed with making homemade pizza, so when I sat down with Michael Chiarello last week at the Food & Wine Classic in Aspen, I asked the chef how he makes pizza at his house.

I'm currently obsessed with making homemade pizza, so when I sat down with Michael Chiarello last week at the Food & Wine Classic in Aspen, I asked the chef how he makes pizza at his house.

Here's the method he shared:

  1. Chiarello pointed out that like most skills, practice helps, so the more pizza you make the better at it you will become. Start by following his recipe for basic pizza dough.
  2. Make sure that the dough has enough moisture. Once it's well combined, knead it with both hands in a counterclockwise motion until it's very smooth like a baby's bottom.
  3. Coat the bottom and top of the dough in olive oil and place in a bowl with a damp rag covering the top. It should double in size.
  4. Knock it out of the bowl, and with a scale, measure out 4-5 ounces of dough. Knead it with both hands again, then form into a ball. Oil all sides of the ball and place in a bowl to rise a second time. It should double in size.
  5. Roll it out and bake on a floured baking sheet. If you want to freeze the dough, place it in the freezer right after the second rise.

Homemade pizza is in heavy dinner rotation around here; we love it!

Homemade pizza is in heavy dinner rotation around here; we love it! So does Lauren; she recently shared a newfound technique for dealing with difficult dough.

I have been alternating between Trader Joe's pizza dough and another brand. Every time I had used the wheat Trader Joe's pizza dough it was always a disaster: first the dough isn't as easy to stretch and no matter what I tried, flour or cornmeal, the dough inevitably stuck. This time I tried parchment paper underneath while baking. To my surprise it worked like a charm, I always pre-bake my crust before adding the toppings. This veggie pizza was a combination of mushrooms, onions, bell pepper, tomato, fresh mozzarella, a touch of jarred vodka cream sauce, and purple basil! Delicious and now I don't have to give up the wheat crust.

After seeing Katie's Pizza Party, I had to make my own pizza pie for dinner last night! I had onions, arugula, and bell peppers on hand for my toppings. I sauteed the onions and the mushrooms while I prebaked my crust. Topped my prebaked crust with cheese, veggies, and a little dabble of sauce. Back in the oven it went until the cheese was melted and golden! Steamy hot and ready to cut!
