When I started asking food friends what they think makes a great meatloaf, three separate people said ask Chef Stephen Trojahn of Gastrotruck, because his smoked meatloaf sliders are amazing.

So I sent him a note, and he kindly shared the following tips!

1. Start with excellent, grass-fed beef.
2. Test & taste your mixture (by frying off a bit first), adjust seasoning as needed.
3. If you don't have a smoker, add a few slices of smoked, finely diced & rendered bacon to the mixture.
4. Let it rest. It's even better if you let it come to room temperature then chill overnight.

I took those ideas and incorporated them into a recent favorite recipe by Chef Damon Wise. Both Trojahn and Wise endeavor to add layers of flavor to their meatloaf, with Trojahn adding the killer touch of cooking his in a smoker. If you have a smoker, do that! Absolutely delicious.

(Gluten-free note: I substituted gluten-free bread with excellent results.)

The picky eaters of the world seem to have collectively clung to a terrifying school-lunch memory of meatloaf as lumpy, gray mystery matter. But this homespun American meal has worked hard to regain street cred, thanks in part to the high-end comfort-food trend that's taken off in recent years.

The beauty of meatloaf lies in its ease, affordability, and versatility. The basic formula calls for three inexpensive components: ground beef or other meat, binders such as eggs and oatmeal, and seasonings. In my opinion, the result is eerie, yet not too gruesome to eat.

One minute you're engaging in some outlandish onstage dramatics or coyly crooning "I Think We're Alone Now," and the next minute you're playing. . . middle-aged suburban parents (with magic powers?) in an AT&T commercial. Sigh. It's not just that this whole ad, a family performance of Meatloaf's "Paradise By the Dashboard Light" with new lyrics about getting this teenage kid his GoPhone, is silly or way too long — though it is both those things. It's mostly just really awkward to watch.
