Got Leftover Egg Whites? Make Meringue Cookies!

I recently made crème brûlée and found myself with several leftover egg whites.

I recently made crème brûlée and found myself with several leftover egg whites. I'm apt to skip scrambled egg whites and am a bigger fan of confections, which is why I decided to make meringue cookies. Ever since I made meringue-topped cakes, I can't get the fluffy stuff out of my head. Crisp on the outside and foamy on the inside, a bite of these meringue cookies will satisfy your sweet tooth without overindulging in something butter-filled. While the cookies are excellent on their own (or even with a glass of Champagne), I also recommend pairing them with tart strawberries and raspberries.

If you've never made meringue before, the most important thing to remember is the egg whites must be completely yolk-free. In addition, make sure your bowl and whisk attachment are clean, dry, and free from any residual oil. Fat is the enemy of fluffy meringue and will prevent the whites from whipping, which is why you must take preventative measures. Keep reading to see the recipe.

Berry Tempting: Eton Mess

I love any food or drink with a good story behind it, from Singapore Slings to Kentucky Hot Browns.

I love any food or drink with a good story behind it, from Singapore Slings to Kentucky Hot Browns. That's why I've been wanting to make the Eton Mess, a strawberry dessert recipe with hundreds of years of English custom behind it, practically forever.

This no-cook berry pudding was first created sometime in the 1800s at Eton College, one of Britain's most distinguished public schools. It's served with great fanfare every year at the school's June 4 celebration picnic, which is held on the playing fields following a cricket game against the students of neighboring Winchester College.

Although historians believe it was first served with bananas, strawberries became de rigueur over the years, as did the addition of crumbled meringue cookies. Think of it as an inside-out pavlova — creamy, crispy, fruity, and sticky. For the five-ingredient recipe, read more.

Make Use of Summer's Berries With Ina's Pavlova

Ever since I saw Ina Garten make a berry pavlova on her Food Network show, Barefoot Contessa, I've fantasized about making one myself.

Ever since I saw Ina Garten make a berry pavlova on her Food Network show, Barefoot Contessa, I've fantasized about making one myself. The episode debuted in 2006 and here I am three years later, finally making the recipe! A pavlova is a dessert consisting of a meringue disk filled with whipped cream and chopped fruit.

Although it requires time and patience, the recipe is rather simple. The three components are made separately and then are combined just before serving. Ina's pavlova includes blueberries, but I subbed in cherries — feel free to use your favorite fruit.

The final dessert is sophisticated, scrumptious, and ideal for Summer entertaining. The outside of the meringue is crisp, while the inside is pillowy and marshmallow-like. The whipped sweetened cream forms a fluffy cushion for the perfectly ripe plump berries. To get started with your own pavlova you'll need the recipe so, read more

Instead of making traditional pumpkin pie, this year I surprised my family on Thanksgiving with a pumpkin meringue pie!

Instead of making traditional pumpkin pie, this year I surprised my family on Thanksgiving with a pumpkin meringue pie! There are three elements to this pie, so I made each one on a different day. The cream cheese pastry crust is simply flavored with cinnamon, nutmeg, and ginger. The exquisite filling — I could not stop licking the bowl! — is made with an infused cream and pumpkin puree. The topping — that's made minutes before serving — is a classic meringue. The hardest part was rolling out the dough, but after a few emergency calls to YumSugar, it was ready to bake.
