The crunchy chips, the melted cheese, the gooey toppings — I love everything about nachos. I'm so crazy about nachos that back in 2008, I created an original series that chronicled my love affair with them. Since I came up with this idea while eating nachos on Super Bowl Sunday, I thought I'd round up my favorite nacho recipes just in time for this year's big game. Be warned: these are not your regular nachos!
Not Your Regular Nachos: Chorizo Pinto Bean Nachos
Nachos are one of my favorite foods, so when I realized the Super Bowl was around the corner, I had to whip up a batch. The thing that makes these nachos — which are not baked, but assembled — absolutely to die for is the spicy queso sauce.
I used Cabot's hot habanero cheddar, and I highly recommend seeking out this cheese to make these nachos. Combined with a quick béchamel, it results in a super creamy, sharp, spicy, and flavorful queso sauce. The chorizo pinto bean mixture is also wildly delicious and could easily be used in huevos rancheros or as the filling for quesadillas.
If you're a fan of classic fiery Tex-Mex, you must make this recipe. It sounds crazy, but I think these were the best nachos I've ever eaten — and I've tried a lot of nachos! Check out the method now.
Not Your Regular Nachos: Spicy Sausage Nachos
When I was selecting my 10 favorite nacho recipes, I suddenly had an intense craving for nachos. So much so that I decided to make some! Not just any recipe though — one that I had seen in Everyday Food for Emeril's amazing-looking spicy sausage nachos. They're loaded with jalapeños, black beans, pepper Jack cheese, and hot sausage.
The only problem with these nachos is that it's hard to stop eating them. I devoured my entire plate and then went back for seconds. Not Your Regular Nachos: Sweet and Savory Nachos
When PartySugar posts her nachos for the week every Thursday, I ogle her pictures with envy. Finally, I couldn't take it anymore and I begged her to let me make a version of my own. I decided to try making nachos that are both savory and sweet, an element that I enjoyed in a grilled cheese sandwich a few weeks ago. There aren't many ingredients in this recipe, but each adds something to the flavor profile of the nachos: The brie melts perfectly; the gorgonzola provides sharpness; the apples are crispy and refreshing and cut through the heaviness of the cheese; the potato chips are wonderfully spiced and incredibly crunchy; the honey adds a lingering sweetness that can't help but make me smile.

The other day I saw a bag of Yukon gold potatoes sitting on the counter at my parents house. Since potatoes weren't on that night's dinner menu, I knew I could use them to make a delicious and easy appetizer. Inspired by a crisp potato recipe from the latest Everyday Food magazine, I decided to make these nachos with blue cheese, green onions, and grape tomatoes. Not Your Regular Nachos: Leftover Pantry Nachos
This week I decided to give myself a nacho challenge. Instead of going to the grocery store to purchase a bunch of ingredients, I would make nachos with items currently in my pantry or refrigerator. Luckily I had leftover chicken, barbecue sauce, and plenty of cheese. The final result was this plate of cheesy, barbecue nachos. I heated the chicken with barbecue sauce and made a simple cheese sauce with low-fat milk, Monterey jack, cheddar cheese, and pickled jalapeños. Sliced black olives and mashed avocado seasoned with lemon juice finished off the dish. A dollop of sour cream was a cooling garnish. Not Your Regular Nachos: Spanish Nachos
Last weekend I was at my parents house in Sonoma County and the weather was wonderfully warm. After consuming a large lunch, I decided to enjoy a light, Spanish-style dinner. The Spanish often eat a dinner of cold cuts, olives, and cheese. Bread or breadsticks normally accompany these simple meals. I took this concept and translated it into a nacho variation. I baked small thin breadsticks topped with Manchego cheese until crisp and melty. Next I topped them with a homemade romesco sauce. Romesco is a typical Spanish sauce made with roasted red peppers and almonds. When served with garlic stuffed olives and fresh jamon, these nachos were salty and delicious!
