My healthy breakfast kick has left me dabbling in everything from savory oatmeal to smoothies to blueberry griddle cakes. But my favorite recipes have been the offbeat ones, the unconventional breakfasts that I'd never think to try if not for a creative chef recipe. Last week, I got hooked on a black bean-filled omelet; now, it's all about salmon sausage patties.
I can't take credit for this concept (that goes to Chad Luethje, chef at the famed Miraval Resort & Spa), but these salmon-based sausages are low-carb, low-fat, gluten-free, and filling. They're simply stunning on their own; the finely-diced texture and chili-cumin spices add a real sausage-like quality and flavor.
