Noteworthy Nibbles — June 22-29, 2010

It's hard to think of more eating and drinking events, as we're still recovering from damage done in Aspen, but it'd be a crying shame to miss all the quality celebrations this week, whether it's for a good cause in Minneapolis or Portland or simply for a smattering of the Windy City's greatest hits.

It's hard to think of more eating and drinking events, as we're still recovering from damage done in Aspen, but it'd be a crying shame to miss all the quality celebrations this week, whether it's for a good cause in Minneapolis or Portland or simply for a smattering of the Windy City's greatest hits. We'll be at the trade portion of Pinot Days this Friday, which is a mere sliver of what'll be offered at the public tasting: 220 Pinot Noirs from across the US.

An Early Look at San Francisco's Rising Food and Wine Stars

Even though we were headed to Aspen before the crack of dawn this morning, last night we passed up packing in favor of the Star Chefs Rising Stars Revue, a traveling event that recognizes some of the most avant-garde culinary professionals in various cities like New York, Chicago, Seattle, and our home base of San Francisco.

Even though we were headed to Aspen before the crack of dawn this morning, last night we passed up packing in favor of the Star Chefs Rising Stars Revue, a traveling event that recognizes some of the most avant-garde culinary professionals in various cities like New York, Chicago, Seattle, and our home base of San Francisco. Over a jaw-dropping view of the bay, we enjoyed vittles from various chefs, some of whom were just beginning to realize their own potential. To get a peek at what cutting-edge creations were served, keep reading.

Could this weekend get any better? It doesn't just mark the celebration of Juneteenth and Father's Day, but also the biggest food festival of the year, Food & Wine's Classic in Aspen. Get excited, because we're going to be there, reporting from the front lines! We can't wait to see what's in store, from Morimoto's beautiful sushi to Tim Love's lamb tacos.

With Summer's food festivals, it's easy to remember why the season's so much fun.

With Summer's food festivals, it's easy to remember why the season's so much fun. The South and Southeast are full of outdoor cookouts, from North Carolina's Blue Ridge BBQ Festival and Hot Ribs, Cool Music to the trio of the Louisiana Cajun Zydeco Festival, Creole Tomato Festival, and Louisiana Seafood Festival that make up the New Orleans Vieux to Do. If all that barbecue has you in need of a refreshment, cool down with a Cuban cocktails seminar or an international wine tasting.

Welcome, June! We've never been more ready to say hello to Summer, the unofficial high season of food festivals. There are a score of events to choose from, including New York's first-ever Latin American restaurant week, a barbecue celebration, and a chowder cook-off.

Where Are the Women Chefs?

For most of history, women played a large role in the kitchen, and now in 2007, the majority of chefs that dominate restaurant kitchens are male.

For most of history, women played a large role in the kitchen, and now in 2007, the majority of chefs that dominate restaurant kitchens are male. All three winners of Bravo's Top Chef were males. The final contestants on the Next Iron Chef are male. So where are the female chefs?

Star Chefs recently sought to answer this question by speaking with nine of the nation's top female chefs. They asked the chefs about having a family, prioritizing, the strength it takes to last in the kitchen, cooking with soul, and experimental techniques. Here's a snippet from their interview with San Francisco's Traci DesJardins:

"You never hear men talk or get asked about their kids as an issue — it’s because they probably have a wife who takes care of the kids. I have my son only two days a week and I’m not available to the restaurant on the days that I take care of my son. So if a critic walks in that day, I’m not going to be there, I’m going to be with my son. Period.

It's a sad truth that having children doesn't affect male chefs as much as it will female chefs, but this is something all female professionals have to deal with, not just chefs. What do you think? Will the role of females in the culinary work force change or will men continue to be in control?

PartySugar Behind The Bash: Star Chefs 2007

Earlier this week, we attended the Star Chef's Rising Stars San Francisco tasting at the St. Francis Hotel.

Earlier this week, we attended the Star Chef's Rising Stars San Francisco tasting at the St. Francis Hotel. Star Chefs is an online community devoted to serving the food industry, and their event was a showcase/contest open to industry insiders and the public alike. Young chefs from 16 of the cities top eateries were invited to share their dishes and the audience then voted on their favorite.

With small serving tables, each uniquely decorated in a theme that reflected the decor of the respective restaurants, the chefs plated up small bites of two dishes each. Everyone concurred that the top 3 dishes were the Moroccan beef cheeks, the deconstructed pineapple upside down cake, and the delicate trout - which won. Created by Chef Mark Dommen of One Market, it was a sublime balance of textures and intricate flavors.
