A vegan lifestyle doesn't mean eschewing hearty meals like stuffed peppers. Here, GraceDickinson shares a lovely photo of her favorite recipe in the Savory Sights group.
With a few last bell peppers still camping out in the summer garden, I snagged them all up this past weekend before they went to the ground. Initially planning on throwing them in with some other veggies and doing a veggie roast, I decided instead to do something more creative: stuffed peppers.

Last weekend when I asked my sister what she wanted for dinner, she said, "something stuffed." I started to throw out options like grilled, ricotta-stuffed chicken and rice-filled, baked tomatoes, but she grabbed the Saveur that was sitting on the coffee table and said excitedly, "let's make these stuffed peppers!" Since they looked absolutely amazing, I happily obliged.
The recipe is pretty straightforward and simple. The filling is a creamy, tangy, and tart mixture of feta, Greek yogurt, and lemon zest. The ingredient list calls for Fresno or Anaheim chiles, which are more sweet than hot, so you can serve this vegetarian dish to people who don't like spicy foods. It's a wonderfully scrumptious appetizer and I highly recommend you give these feta-stuffed peppers a try; here's the recipe.
The multicolored selection of bell peppers (red, green, yellow, even purple) makes for a colorful and attractive serving vehicle.
The beauty of this recipe is its adaptability; use leftover ground beef from crockpot lasagna — or, if you avoid red meat, ground turkey or chicken. For a quick weeknight dinner that also works well for entertaining, read more.
Most of the time, classic Tex-Mex food is full of delicious flavors and tons of fatty cheese and starchy chips. However, making Tex-Mex at home allows you to control the ingredients. For tonight's simple and scrumptious dinner, cereal provides crunch, low fat cheese is used in moderation, and large peppers replace flour tortillas. All of these substitutions help create a more health conscious dinner. To get the recipe to this beautifully presented meal, read more
