Baked Goat Cheese Is Easiest Appetizer Ever

After obsessing over the perfect Thanksgiving menu, I hit send on the email — with the very important grocery list — to my father, only to realize I had forgotten one crucial item: the appetizer! I didn't want to serve something heavy or difficult to make, and I didn't have time to browse the Internet in search of inspiring hors d'oeuvres ideas.

Thus, I decided to make baked goat cheese. Quite possibly the world's simplest dish, baked goat cheese is just that, cheese that's cooked in an oven-safe dish. I served it with crostini, but feel free to offer your favorite cracker instead. To get the recipe (it's kind of silly calling it a recipe; it's that easy!), keep reading.

Killer App: Figs in Blanket

Figs are one of my favorite late Summer, early Fall fruits.

Figs are one of my favorite late Summer, early Fall fruits. Thus, after making bacon-wrapped dates, I looked for a similar recipe that used fresh figs. To my delight, I came across this Sandra Lee recipe that combines figs, goat cheese, and prosciutto. Inspired by her recipe but wanting to keep it simple, I came up with my take on her killer app. Rather than heat up the house, I decided to throw these tasty little bites on the barbecue.Although any variety of fig will work, I used Calimyrna and found that the easiest way to remove the flesh is with a melon baller. This delicious appetizer is perfect for a party because it can be prepped ahead of time and only requires a few minutes on the grill, so you won't miss any of the fun. With the salty prosciutto, sweet fig, and tangy goat cheese center, these nibbles are full of flavor and texture. If you want to impress your guests with figs in a blanket, keep reading.

Learn to Love Figs

Eating many colors of the rainbow is easy, but dark purple can be hard to come by.

Eating many colors of the rainbow is easy, but dark purple can be hard to come by. And that is just one reason you should learn to love Black Mission Figs.

While dried figs are available all year round, fresh figs are in season June through September, which means you should start seeing them in the grocery store soon and they should be affordable. Four ounces of fresh figs provides about four grams of fiber. Figs are also a good source for potassium. Most importantly they are a sweet low-calorie food — four ounces is only 84 calories. They make a juicy dessert on a hot night. You can add figs to salads; they pair wonderfully with arugula. I like to eat them as an appetizer. Diet Tip: Go Tapas

Just because you're eating out does not mean you need to conform to eating the oversized entrées.

Just because you're eating out does not mean you need to conform to eating the oversized entrées. One thing that I often do when I am eating out is order from the starters/appetizers on the menu. Not only are the portions way smaller, but I am also able to get a taste of more foods than just one giant helping of the same meal. I've even gotten my husband on board by convincing him that it's just like eating tapas, which means we're able to split a few starters between us. Be careful though, small portions of some starters pack a lot of calories, so steer clear of menu items containing buzz words such as creamy, fried, and crispy.

I recently attended a party where one of the appetizers featured a gorgeous plate of marinated artichoke hearts. Coiled on top of each heart was the slippery little body of an anchovy. Before you judge this salty appetizer, let me tell you these were the highest quality, best-tasting anchovies I've ever had in my life. The pair was surprisingly delicious and I ate several without hesitation. Could you do the same? Would you eat this appetizer?

Healthy Eating Tip: Eat a Salad First

I'm always looking for ways to fill up on good stuff so I don't stuff myself with the bad stuff.

I'm always looking for ways to fill up on good stuff so I don't stuff myself with the bad stuff. One tip that really works for me is to always eat a small salad before eating dinner. I don't allow myself to eat anything else before finishing my salad, which means by the time I get around to my main meal I've already loaded up on veggies. What's more? Half the time I find myself fuller quicker and I'm not as likely to overeat on the less healthy items that usually come with the main course — this means fewer calories too. Plus eating more salad increases your intake of vitamins C, E, B6, and folic acid — key nutrients in promoting health.

Fit's Tip: Skip the dressing altogether or opt for something light — I like to use a little balsamic vinegar.
