How to Pair Red Wine With Cheese

Conventional wisdom maintains that white wine pairs better with cheese than red.

Conventional wisdom maintains that white wine pairs better with cheese than red. There's certainly some validity to that statement, but with the right kind of red wine and cheese, this can be done to elegant effect, as I recently learned at a seminar taught by experts Laura Werlin and Naomi Smith at the Artisan Cheese Festival.

Much of the issue with pairing red wine with cheese comes down to tannins (the bitter, mouth-drying component present in red wine, tea, coffee, and some fruits like acai), which are notably absent from white wine. When selecting wines, choose a red with integrated tannins — think smooth and velvety, rather than rough and harsh. Wines grown in a cooler climate — think Oregon, Washington State, or Sonoma versus Napa — and particular milder, lighter-bodied wines like Pinot Noir or a restrained Cabernet Sauvignon are a safer bet. Look for a wine with an alcohol content of 14 percent or less when pairing with cheese, as these wines are less likely to overpower their cheesy companions.

At the California's Artisan Cheese Festival, Lassa Skinner, retail director of the magazine Culture: The Word on Cheese, spoke about how to conduct a cheese tasting on a basic level. Like wine, it begins with the varietal (of milk), continues to the body (the rind and cheese's texture), and ends with sniffing and savoring (the flavor). According to Lassa, when in doubt about the name of the cheese you recently had at a restaurant or party, describing these four components will help your cheesemonger guide you in the right cheesy direction. Getting Cheesy at the Artisan Cheese Festival's Barn Dance

Friday night, I had the pleasure of heading back to my hometown, Petaluma, CA, to attend the Artisan Cheese Festival.

Friday night, I had the pleasure of heading back to my hometown, Petaluma, CA, to attend the Artisan Cheese Festival. The event kicked off with a fabulous and festive down-home barn dance. It was a wonderful change of pace from the past two years, where the opening party was held at a hotel. While an assortment of rich, creamy, and spicy cheese was clearly the highlight, the beautiful rolling hills and the rustic barn made for a stunning backdrop. Local brewery Lagunitas was also on hand pouring an endless river of IPA and pilsner.

At the Artisan Cheese Festival, I was browsing the cheese display with my mom when she did something totally out of the ordinary.

At the Artisan Cheese Festival, I was browsing the cheese display with my mom when she did something totally out of the ordinary. She's not an adventurous eater, but to my surprise she took a gigantic chunk of vegetarian pâté! I love regular pâté, but was a little wary of the bright orange, green, and white thing that rested on my mom's plate. I wish I could say it was absolutely delicious but it just wasn't. The texture was weird and the flavor odd. We were both glad we tried it, but aren't running out to purchase buckets of vegetarian pâté. How about you? Would you eat this vegetarian pâté?

Party Foul: Not Enough Room to Move

When hosting any sort of an event, it is crucial to find the correct balance between too much open space and not enough room.

When hosting any sort of an event, it is crucial to find the correct balance between too much open space and not enough room. If there is too much room, the party looks like an empty dance floor at a bad prom. If there is no room, it can be stifling and uncomfortable.

During the public tasting at the Artisan Cheese Festival, I found myself crammed between several people all desperate to taste cheese. The booths were too close together and there was no flow of traffic because the place was over packed. Needless to say, it was not fun. I wondered why the event planners had not spaced out the booths better or taken into consideration that it was a beautiful day that would bring a bigger crowd to the event.

Although this was a large event, the same goes for private parties in the home. If you have a small studio, don't invite over fifty friends. Allow room for guests to mingle without having to press up against a new acquaintance.
